Blackstone SoCal Chicken Breakfast Bowls

This griddle recipe was inspired by the new SoCal dish at First Watch restaurant, but I made a few tweaks for my Blackstone SoCal Chicken Breakfast Bowls.

The First Watch version has chicken and bacon, and I chose to simply use chicken breakfast sausage.

And I mixed up the toppings a bit as well.

How to make Blackstone SoCal Chicken Breakfast Bowls

First prepare your griddle ingredients.

I am using a bag of diced Simply Potatoes, sliced chicken breakfast sausage, black beans, eggs, and my seasoning blends.

The Blackstone Lumberjack seasoning is one I love for any breakfast dish.

And you can use any taco or fajita seasoning, Tajin, or I am using the Blackstone Tequila Lime seasoning blend.

My daughter came over to hang out on this day, so we decided to cook together.

Preheat the Blackstone or flat top griddle to medium.

Add some cooking oil, the potatoes, kosher salt, pepper, and the Blackstone Lumberjack seasoning if you have it.

Mix it together, squirt some water, and cover with a melting dome for 8 minutes total.

Remove the dome a few times to mix the potatoes and add more water each time before covering again.

Set the dome aside and add more cooking oil.

Also, the black beans and sliced chicken sausage.

And some of your taco seasoning, Tajin, or in my case, the Blackstone Tequila Lime seasoning.

Cook and mix this together for about 4 minutes.

And hopefully have plenty of fun and laughs like us 🙂

Finally, add a little more cooking oil and crack 4 eggs on the griddle.

Season with kosher salt, pepper, and the Lumberjack seasoning if you have it.

Cook the eggs like a minute or two per side, or however you prefer.

Bring all the yumminess from the Blackstone inside and set up a topping bar.

We all added our own unique flare to these bowls and had a little contest of who could make theirs the prettiest.

Well, my daughter won!

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • cooking oil of choice
  • 1 (20-ounce) bag diced Simply potatoes
  • kosher salt, pepper, Blackstone Lumberjack Breakfast seasoning (optional)
  • 1 (8-ounce) package cooked chicken breakfast sausage links sliced
  • 8 ounces canned black beans drained and rinsed
  • 1 teaspoon taco or fajita seasoning, Tajin, or Blackstone Tequila lime seasoning
  • 4 eggs
  • 1 cup shredded cheese of choice
  • 2 small avocado diced
  • Optional toppings: cilantro, cotija cheese, pickled red onions, sour cream, salsa, taco sauce (I used cilantro lime sauce)

Instructions
 

  • Preheat griddle to medium. Add cooking oil of choice, potatoes, kosher salt, pepper, and Lumberjack seasoning if using. Squirt some water on the potatoes and cover with a melting dome for 8 minutes. Mix a few times and add more water before covering again each time.
  • Set melting dome aside. Add the sliced breakfast sausage, black beans, and your taco or fajita seasoning blend of choice. Cook 4 more minutes, mixing together a few times with spatulas.
  • Add cooking oil to empty side of griddle, crack the eggs, season with kosher salt, pepper, and Lumberjack seasoning if using. Cook eggs 1 to 2 minutes per side while also mixing the black beans, chicken, and potatoes.
  • Serve the chicken, potatoes, and beans in bowls topped with shredded cheese, avocado, and fried eggs. Add optional toppings such as cilantro, cotija cheese, pickled red onions, sour cream, salsa, and/or taco sauce.
