Blackstone Cheesy Chorizo Chicken and Pineapple

This is a pretty easy weeknight meal that can feed a crowd or use the leftovers to make quesadillas… so Blackstone Cheesy Chorizo Chicken and Pineapple could be two meals in one!

A great sweet and spicy combo served over rice and drizzled with plenty of queso.

How to make Blackstone Cheesy Chorizo Chicken and Pineapple

Start with 1 1/2 pounds of diced chicken thighs, fresh pineapple chunks, and half pound of ground chorizo.

Preheat your Blackstone or flat top griddle to medium heat.

Add some cooking oil of choice, the chicken, kosher salt, pepper, and your favorite taco or fajita seasoning blend.

I couldn’t decide which of these to use so I used all three 🙂

I didn’t measure, just kind of seasoned with my heart.

Also add the pineapple and chorizo.

Cook this for about 8 to 10 minutes, mixing with spatulas a few times.

I warmed my queso right on the griddle in a clean grease tray liner.

I microwaved a few pouches of cilantro lime rice, but you could use the Mexican style rice too.

Then topped the rice with plenty of chicken, pineapple, and chorizo and of course lots of cheesy queso.

Blackstone Cheesy Chorizo Chicken and Pineapple

Blackstone Cheesy Chorizo Chicken and Pineapple is a tasty, easy griddle recipe served over rice and smothered in queso for a fun family meal!

Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • cooking oil of choice
  • 1 1/2 pounds boneless, skinless chicken thighs cut into bite size pieces
  • kosher salt, pepper, taco or fajita seasoning blend of choice
  • 8 ounces chorizo
  • 2 to 3 cups fresh pineapple chunks
  • 3 (8.5-ounce) pouches microwavable rice (cilantro lime or Mexican flavor)
  • 1 cup queso warm
  • Optional: lime wedges, cilantro, hot sauce, pickled jalapenos

Instructions
 

  • Preheat griddle to medium. Add chicken and season with kosher salt, pepper, and taco or fajita seasoning blend. Add chorizo and pineapple to griddle as well.
  • Cook 8 to 10 minutes, mixing together a few times with spatulas and breaking apart the chorizo.
  • Microwave rice according to package directions or add rice to empty space on griddle during the last 3 minutes. Add some water and cover with melting dome, breaking apart with spatulas.
  • Serve chicken, chorizo, and pineapple mixture over rice and drizzle queso over top. Add toppings such as lime wedges, cilantro, hot sauce, and/or pickled jalapenos if desired.
