Blackstone BBQ Ranch Chicken and Potatoes
Blackstone BBQ Ranch Chicken and Potatoes was our fun family pool party dinner!
Hanging by the pool with the kids and grandkids is my happiest of places to be, especially when I can treat everyone to a tasty dinner on the griddle.
I doubled the recipe to feed my whole crew, but it was so simple and easy…. and everyone loved it.
Bonus points that it was also very budget friendly.
How to make Blackstone BBQ Ranch Chicken and Potatoes
First dice 1 1/2 pounds of redskin or gold potatoes.
And cut 1 1/2 pounds of boneless, skinless chicken thighs into bite size pieces as well.
Put them on a tray with minced garlic, BBQ seasoning, and dry ranch seasoning.
Preheat the griddle to medium heat for a few minutes, then add some cooking oil of choice along with the potatoes, kosher salt, and pepper.
Cover with a melting dome and add some water.
Let them cook 6 to 7 minutes total, removing the dome a few times to flip them and add more water before covering again.
Add a little more cooking oil, the chicken, plus more kosher salt and pepper.
This will cook another 6 to 7 minutes.
Mix everything together with hibachi spatulas a few times.
Finally add some minced garlic, BBQ seasoning, and dry ranch seasoning.
Cook 2 to 3 more minutes, mixing together.
Taste for seasoning and add more kosher salt, pepper, BBQ seasoning, and/or ranch seasoning as needed.
We served Blackstone BBQ Ranch Chicken and Potatoes with a mixture of ranch dressing and BBQ sauce for dipping 🙂
I made a Caesar salad and cooked some garlic toast on the griddle for a complete meal.

Ingredients
- cooking oil of choice
- 1 1/2 pounds redskin or gold potatoes cut into bite size pieces
- kosher salt, pepper
- 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 5 to 6 cloves garlic minced
- BBQ seasoning blend, dry ranch seasoning
- ranch dressing, BBQ sauce
Instructions
- Preheat the griddle to medium heat for a few minutes. Add some cooking oil, the potatoes, kosher salt, pepper, and some water. Cover with a melting dome and cook 6 to 7 minutes. Remove the dome a few times to flip the potatoes and add more water each time before covering again.
- Set the melting dome aside and add more cooking oil, the chicken, more kosher salt and pepper. Cook together 6 to 7 more minutes, mixing together with hibachi spatulas a few times.
- Add the garlic, some BBQ seasoning, and dry ranch seasoning. Cook another 2 to 3 minutes, mixing together. Taste and add more kosher salt, pepper, BBQ seasoning, and/or dry ranch seasoning as needed.
- Serve with ranch dressing, BBQ sauce, or mix together some ranch and BBQ sauce for dipping.
