Blackstone Caribbean Chicken Nachos
A tasty fusion of Mexican and Caribbean flavors and ingredients make Blackstone Caribbean Chicken Nachos so unique and over the top delicious!
My daughter even said this was one of her all-time favorite things I have made… and I make A LOT of yummy stuff.

How to Make Blackstone Caribbean Chicken Nachos
Put diced chicken thighs in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning of choice, garlic, soy sauce, and lime juice.
I used a Caribbean blend plus a mix of Blackstone Island Stir Fry and Pineapple Sriracha seasonings.
Massage bag until combined and marinate in the fridge for at least an hour.
Preheat your Blackstone or flat top griddle to medium heat, then add a little cooking oil of choice and the seasoned chicken.

Cook 8 to 10 minutes, mixing with spatulas a few times.

Then remove the chicken or scoot to the side of your griddle and scrape it clean if needed.

Lower heat to medium low/low and spread a bag of tortilla chips on a baking sheet placed on griddle.
You can certainly spread chips directly on the griddle, I went with the tray for easy serving purposes.

Sprinkle shredded cheese, plus the cooked chicken.

Then drizzle queso over top then more shredded cheese.

I also sprinkled a little more Blackstone Island Stir Fry and Pineapple Sriracha seasonings.
Lower griddle lid or cover with lid or large melting dome until cheese is melted.

Finally add yummy toppings to your Blackstone Caribbean Chicken Nachos 🙂
We went with mango salsa, diced pineapple, cilantro, lime wedges, hot sauce, and pickled red onions.

Blackstone Caribbean Chicken Nachos
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 pound boneless, skinless chicken thighs cut into bite size pieces
- kosher salt, pepper, Caribbean Jerk seasoning blend (I also used Blackstone Island Stir Fry and Pineapple Sriracha seasonings)
- 3 cloves garlic minced
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- cooking oil of choice
- 1 (12-ounce) bag tortilla chips
- 2 cups shredded cheese of choice
- 1 (15-ounce) jar queso warm
- 1/2 cup mango salsa
- Optional toppings: diced pineapple, cilantro, more lime wedges, hot sauce, pickled red onions
Instructions
- Put the chicken in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning (to taste), garlic, soy sauce, and lime juice. Massage bag until combined and marinate in fridge for at least an hour.
- Preheat griddle to medium heat. Add cooking oil and the seasoned chicken. Cook 8 to 10 minutes, mixing with spatulas a few times. Remove or scoot to side of griddle.
- Lower heat to medium low/low and spread chips on either a baking sheet placed on griddle or spread chips directly on the griddle. Sprinkle half of the shredded cheese, drizzle queso over top, add chicken, then remaining shredded cheese. Lower griddle lid or cover with lid or large melting dome until cheese is melted.
- Top with the mango salsa and any additional toppings such as diced pineapple, cilantro, more lime wedges, hot sauce, and/or pickled red onions.
