Blackstone Low Carb Peanut Chicken Noodles
Shirataki noodles are keto approved, and that’s what makes Blackstone Low Carb Peanut Chicken Noodles a tasty dinner on the griddle for those counting their carbs and calories!
You could easily substitute any cooked noodles if you still wanted a delicious stir fry dinner with all the carbs you want 😉
How to make Blackstone Low Carb Peanut Chicken Noodles
Start by marinating your chicken in some soy sauce, garlic, ginger, and this optional seasoning blend.

Then prep all of your ingredients and head out to your Blackstone or flat top griddle.
This peanut sauce was not as low in carbs as I would have liked, but certainly use your favorite Keto approved peanut sauce.

Cook the chicken and a sliced red bell pepper on the griddle for about 6 to 7 minutes, mixing a few times.

Then add your rinsed shirataki noodles.

Also that store bought peanut sauce and fresh chopped cilantro.

Mix it all together and cook for juuuuust a few more minutes.

I topped my Blackstone peanut noodles with crushed peanuts and lime wedges to squeeze over top 🙂

Blackstone Low Carb Peanut Chicken Noodles
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 3 tablespoons soy sauce
- 4 to 6 cloves garlic
- 1 tablespoon fresh grated ginger or ginger paste
- kosher salt, pepper, seasoning blend of choice (optional, I used Blackstone Teriyaki seasoning)
- cooking oil of choice
- 1 red bell pepper sliced
- 2 (7-ounce) pouches shirataki noodles (or regular cooked noodles of choice) rinsed
- 1 (12-ounce) jar store bought peanut sauce of choice
- 1 bunch cilantro chopped
- Toppings: crushed peanuts, lime wedges
Instructions
- Put the chicken in a gallon size plastic bag and add soy sauce, garlic, ginger, kosher salt, pepper, and seasoning blend (if using). Massage the bag until combined and marinate in the fridge for at least an hour.
- Preheat your griddle to medium. Add cooking oil of choice, chicken, and bell peppers. Cook 6 to 7 minutes, mixing a few times.
- Add the shirataki noodles, peanut sauce, and cilantro. Cook 2 to 3 minutes, mixing a few times. Taste for seasoning and add kosher salt and pepper if needed.
- Serve topped with crushed peanuts and lime wedges to squeeze over top.
