Blackstone Low Carb Korean Chicken Noodles

My friend Michele came to cook with me!! She specializes in Keto recipes, so I couldn’t wait to make these Blackstone Low Carb Korean Chicken Noodles using Shirataki noodles with her!

As you can tell, we were super excited to hang out and cook together on the Blackstone griddle 🙂

How to make Blackstone Low Carb Korean Chicken Noodles

Just a few simple ingredients to get started, and I always put them on a tray to easily carry out to the griddle in one trip.

First, I made the sauce while Michele got started chopping and mincing.

The sauce is a mix of 1/2 cup Keto friendly teriyaki sauce (I used Kikkoman), 2 to 3 tablespoons gochujang, and a squeeze of lime juice.

Preheat your Blackstone or flat top griddle to medium heat.

Add some cooking oil of choice along with a pound of diced chicken thighs, a sliced red pepper, kosher salt, and pepper.

Cook this on the griddle for about 5 minutes, mixing with spatulas a few times.

Next add some minced garlic, ginger, the noodles that have been rinsed, and the Korean sauce from earlier.

Also sliced green onion, fresh cilantro, and a little more kosher salt and pepper.

Mix this together on the griddle with spatulas, and if you’re lucky enough, have a friend help you because we had LOTS of laughs 🙂

She even got me this super awesome Spaceman Knife as a gift that I used to chop the peanuts to garnish the dish!

I may never use another knife again I loved it SO much.

Serve Blackstone Low Carb Korean Chicken Noodles with more lime wedges to squeeze over top 🙂

And add toppings such as sriracha mayo, chopped peanuts, more cilantro, and sesame seeds.

Ingredients
  

  • 1/2 cup Keto friendly teriyaki sauce (I used Kikkoman)
  • 2 to 3 tablespoons gochujang chili paste
  • 1 lime cut into wedges
  • cooking oil of choice
  • 1 red bell pepper sliced
  • 1 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • kosher salt, pepper
  • 4 to 6 cloves garlic minced
  • 2 teaspoons grated ginger
  • 1 bunch green onions cut into 1 inch pieces
  • 1 bunch fresh cilantro chopped
  • 3 (7-ounce) pouches Shirataki noodles rinsed
  • Optional toppings: more cilantro, sriracha mayo, chopped peanuts, sesame seeds

Instructions
 

  • Put the teriyaki sauce, gochujang, and squeeze half of the lime wedges in a bowl and whisk until combined to make the Korean sauce.
  • Preheat your griddle to medium heat. Add cooking oil of choice, the sliced red pepper, chicken, kosher salt, and pepper. Cook about 5 to 6 minutes, mixing a few times with spatulas.
  • Add the garlic, ginger, green onions, cilantro, Shirataki noodles, Korean sauce, and a little more kosher salt and pepper. Cook 3 to 4 more minutes, mixing with spatulas.
  • Serve with the remaining lime wedges to squeeze over top and optional toppings such as more cilantro, sriracha mayo, chopped peanuts, and/or sesame seeds.
