
Blackstone Griddle Breakfast Crostini
An easy and unique breakfast or brunch recipe for the flat top grill are these adorable Blackstone Griddle Breakfast Crostini!
These French toast baguettes topped with eggs, sausage, and cheese could also be a great breakfast-for-dinner idea.
Crostini is basically toasted pieces of bread topped with meats and cheese, or really any toppings of choice usually served as an appetizer.
This fun breakfast version cooks up quickly thanks to the large griddle cooking space… and no dirty pots and pans 🙂

How to make Blackstone Griddle Breakfast Crostini
First crack 3 eggs in a small bowl with kosher salt and pepper.
Then crack 3 more eggs in a larger bowl with sugar and half cup of milk or coffee creamer.
I used vanilla flavored creamer to make the French toast even tastier!
Beat the egg mixture together in both bowls.

Slice 16 crostini using French or Italian baguette.
And toss them in the French toast batter.

Then preheat the griddle to medium low for a few minutes.
Cook the sausage links for 8 to 9 minutes, turning a few times.
Make either 16 or 8 sausage links, depending on if you want a whole sausage link or just half a link on each crostini.
Also add some butter or oil to the griddle and slowly add the eggs, using a spatula to contain them.

Scramble the eggs and remove them once they are cooked how you prefer.

And continue cooking the sausage until it’s cooked through.

Add more butter or oil to the griddle.
And use tongs to add the slices of French toast to the griddle.

Cook them 2 to 3 minutes, then flip them.
And add the scrambled eggs, some shredded cheese, and a sausage link (or half a sausage link) to each crostini.
I also added a little more cheese over top.

The melted cheese will help the sausage to stick.
You could also use a melting dome to speed up the melting 🙂

These are pretty darn cute if you ask me!

Serve Blackstone Griddle Breakfast Crostini with a drizzle of maple syrup over top.

Blackstone Griddle Breakfast Crostini
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 6 eggs
- kosher salt, pepper
- 1/2 cup milk or flavored coffee creamer
- 1 tablespoon sugar
- 16 slices French or Italian bread
- 8 to 16 links breakfast sausage (depending on if you want a whole sausage link or a half sausage link on each crostini)
- butter or cooking oil of choice
- 1 cup shredded cheese
- maple syrup to drizzle over top
Instructions
- Crack 3 eggs in a small bowl, add kosher salt and pepper. Beat with a fork until mixed.
- Crack the other 3 eggs in a large bowl, add the milk or creamer and sugar. Beat with a fork. Add the bread slices and toss until they are coated.
- Preheat the griddle to medium low heat for a few minutes. Add the breakfast sausage links and cook 8 to 9 minutes, turning a few times.
- Add some butter or cooking oil to an empty side of the griddle while the sausage is cooking. Slowly add the eggs that were beaten with salt and pepper, using a spatula to keep the eggs contained. Scramble the eggs for 2 to 3 minutes and remove once cooked.
- Add more butter or oil to the griddle and the slices of French toast/ crostini. Flip them after about 2 minutes. Top each with the eggs, cheese, either a half or whole sausage link, and more cheese.Note: I had the best luck using tongs to add the bread to the griddle and flipping them.
- Cover with a melting dome until the cheese melts. Turn the griddle off if you think the bottoms of the crostini will cook too much.
- Serve with maple syrup to drizzle over top.
