Blackstone Taco and Veggie Meal Prep
I’m back with a NEW Blackstone griddle meal prep recipe that you can cook all at once and make FOUR dinners with… this one is Blackstone Taco and Veggie Meal Prep!
I’m making two kinds of potatoes because our house is divided with half liking sweet potatoes and half liking white potatoes.
And I chose to make ground turkey for this, but ground chicken or beef works too.
But my favorite juuuuust might be the sweet mini peppers.

How to make Blackstone Taco and Veggie Meal Prep
Start with your Blackstone or flat top griddle over medium heat.
A little cooking oil with sweet potatoes on one side and white potatoes on the other.

Season them with kosher salt and pepper, add some water, and cover with a melting dome (I used two).

The potatoes will cook for 7 to 8 minutes, removing the dome a few times to mix them and add more water before covering again.

Next, scoot the taters to the edge of the griddle to make room for the rest of this meal prep.

More cooking oil and then add 3 pounds of ground turkey (chicken or beef works too) and 3 packets of taco seasoning.
The sliced sweet mini peppers join the party as well.

Cook everything for 7 to 8 more minutes, mixing a few times.

Sweet Potato Taco Salads
Taco Ranch salad kit (I used Taylor Farms) with sweet potatoes, taco meat, and peppers with the dressing and toppings that come with the kit.

Taco and Sweet Pepper Quesadillas
Preheat your Blackstone to medium low with cooking oil, tortillas, cheese of choice, taco meat and sweet peppers, more cheese, and another tortilla.
Cook and flip a few times unto golden brown and melty.

The Viral Sweet Potato Cottage Cheese Bowls
Sweet potatoes, taco meat, and peppers from this meal prep and add cottage cheese, avocado, and a drizzle of hot honey.

Taco Loaded Potato Bowls
First a layer of either sweet or white potatoes, the taco meat, sweet peppers, and toppings of choice like lettuce, cheese, sour cream, hot sauce, and pickled red onions.

Blackstone Taco and Veggie Meal Prep
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 2 to 4 sweet potatoes (depending on size) diced, skin on
- 2 to 4 Russet potatoes (depending on size) diced, skin on
- kosher salt, pepper
- 3 pounds ground turkey, chicken, or beef
- taco seasoning (I used 3 taco seasoning packets plus Blackstone Tequila lime seasoning)
- 1 pound mini sweet peppers sliced
Instructions
- *I made this on my 36 inch Blackstone griddle, smaller griddles you may need to adjust this recipe and cook in two batches*Preheat your griddle to medium heat. Add cooking oil of choice and sweet potatoes on one side of griddle, Russet potatoes on other side. Season both with kosher salt and pepper, mix with spatulas then add water to each and cover with a large melting dome, lid, or I used two smaller melting domes.
- Cook 7 to 8 minutes under the melting domes, remove domes a few times to mix with spatulas, and add more water before covering again.
- Set melting domes aside and scoot the potatoes to the edge of the griddle, keeping them separate.
- Add more cooking oil to griddle and then the ground meat and the sweet peppers, keeping them separate.
- Season the ground meat with taco seasoning (I also seasoned my peppers and both potatoes with some Tequila Lime taco seasoning).
- Cook everything for 7 to 8 minutes, mixing each with spatulas a few times. Add some water to the ground meat halfway through (about 1/4 cup).
- Taste for seasoning and add taco seasoning, kosher salt, and/or pepper as needed. Pack everything up in containers with lids and use in several meals throughout the week (4 meal ideas in post above).
