Traeger Brisket Burnt Ends

Traeger brisket burnt ends is one of those recipes for the smoker or pellet grill that you will be ohhhh-so-glad that you tried!

They are basically cubes of brisket, seasoned with your favorite barbecue seasoning, and cooked two ways on the pellet grill.

Once by themselves on the grill grate, and again swimming in barbecue sauce and covered with foil in a pan.

How to make Traeger Brisket Burnt Ends recipe

First trim any extra pieces of fat from a 4 to 5 pound brisket.

Then cut the brisket into one to two inch cubes and place in a bowl or gallon size plastic bag.

Add some olive oil, a cup of brown sugar, half cup of your favorite barbecue seasoning, kosher salt, and pepper.

Toss until the brisket cubes are evenly coated.

Then set your Traeger pellet grill or your smoker to 225 degrees.

And place the pieces of seasoned brisket right on the grill grate for two hours.

Use a pair of tongs to flip the brisket halfway through.

After two hours place the brisket pieces into a foil pan.

Add a cup of barbecue sauce, a quarter cup of honey, and three tablespoons of cubed butter.

Toss until evenly combined, cover with foil, and place back on the smoker for another hour and a half to two hours.

Ingredients
  

  • 4 to 5 pound brisket
  • 1/4 cup olive oil
  • 1 cup brown sugar
  • 1/2 cup BBQ seasoning blend
  • kosher salt, pepper
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 3 tablespoons butter cut into smaller pieces

Instructions
 

  • Trim some of the thicker pieces of fat from the brisket if needed and cut the brisket into 1 to 2 inch cubes.
  • Put the brisket cubes in a large bowl or gallon size plastic bag and add the olive oil, brown sugar, BBQ seasoning, kosher salt, and pepper. Toss until evenly coated.
  • Set the Traeger pellet grill or smoker to 225 degrees, place the brisket bites on the grill grates for 2 hours, flipping them halfway through.
  • Remove the pieces of brisket and place in a 9×13 foil pan. Add the BBQ sauce, honey, and butter. Toss until evenly combined and cover with foil.
  • Place the covered foil pan back onto the Traeger or smoker (still at 225 degrees) for 1 1/2 to 2 more hours.
