
Blackstone Lemon Hot Honey Chicken Skewers
Kabob recipes for the flat top griddle don’t get much better than these Blackstone Lemon Hot Honey Chicken Skewers.
They hit every must-have flavor note in my opinion… savory, sweet, spicy, acidic, plus a little umami from the soy sauce 🙂
I made them on the Blackstone along with some diced zucchini and grape tomatoes for a complete griddle meal.

How to make Blackstone Lemon Hot Honey Chicken Skewers
I added about 3 tablespoons of fresh lemon juice and hot honey to a bowl along with plenty of minced garlic.

Next add 2 tablespoons melted butter and Dijon mustard along with some soy sauce, kosher salt, pepper, crushed red pepper flakes, and parsley as an optional ingredient.
Mix this together and add 1/3 of it to 1 1/2 pounds of cubed chicken thighs.

Mix the chicken until combined and let this marinate for 30 minutes if you have time.
Then add the chicken onto 4 kabob skewers.

Preheat your Blackstone or flat top griddle to medium heat, add some cooking oil of choice, and place the kabob skewers.
Sprinkle more kosher salt, pepper, and crushed red pepper flakes on the chicken.
And the Blackstone Honey Jalapeno seasoning blend if you have it (and I think you should because it’s soooooo good!).

I added the zucchini and tomatoes (with a few seasoning blends) at the same time as the chicken kabobs.
Cook both for 8 to 10 minutes, flipping the kabobs a few times.
And mixing the zucchini and tomatoes a few times, if you’re making those as well.

During the last half of cooking, brush with some of the remaining hot honey lemon butter several times.
Yes, it will caramelize on your griddle because of the honey, and those charred bits are what makes these extra yummy.
Luckily it’s super easy to scrape off the griddle after cooking.

Serve Lemon Hot Honey Chicken Skewers with the remaining lemon garlic butter for dipping!

Blackstone Lemon Hot Honey Chicken Skewers
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 3 tablespoons lemon juice
- 3 tablespoons hot honey
- 2 tablespoons melted butter
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- 6 cloves garlic finely minced
- kosher salt, pepper, crushed red pepper flakes
- Optional: chopped parsley
- 1 1/2 to 2 pounds boneless, skinless chicken thighs cut into bite size pieces
- cooking oil of choice
- Optional: Blackstone Honey Jalapeno seasoning blend
Instructions
- Put the lemon juice, hot honey, butter, Dijon mustard, soy sauce, garlic, kosher salt, pepper, crushed red pepper flakes, and parsley (if using) in a bowl and whisk until combined.
- Put the chicken in a bowl with 1/3 of the hot honey lemon butter. Toss until combined and marinate 30 minutes, then put the chicken onto 4 kabob skewers.
- Preheat griddle to medium. Add cooking oil and the chicken skewers. Sprinkle more kosher salt, pepper, crushed red pepper flakes, and the Blackstone Honey Jalapeno seasoning if desired.
- Cook 8 to 10 minutes, turning a few times. Brush some of the hot honey lemon butter on the skewers during the last half of cooking a few times.
- Serve with leftover hot honey lemon butter for dipping.
