Grilled Steak Fajita Skewers
Grilled steak fajita skewers is a great dinner recipe bursting with fabulous fajita flavors!
It’s a healthy and low carb way to enjoy the yumminess of fajitas, it is also keto friendly if you are into that.
Of course you can always serve these in tortillas with fajita toppings and reap the benefits of the charbroiled grilled flavor.
I am using a packet of fajita seasoning out of pure laziness, if you have a homemade blend use that instead.
How to make grilled steak fajita skewers
First make the marinade by combining olive oil, soy sauce, lime juice, garlic, a packet of fajita seasoning, kosher salt, and pepper.
Save a few spoonfuls of the marinade for the peppers and onions.
Toss the remaining marinade in a gallon size plastic bag with two pounds of steak cut into one inch cubes.
I used New York Strip, but sirloin or flatiron would work well too.
Let the steak marinate for at least a few hours if possible.
Assemble the kabobs by alternating the steak, onions, and peppers.
If using wooden skewers I recommend soaking them in water for several hours so they don’t catch fire.
Make sure to pour any extra marinade over top and season with kosher salt and pepper đŸ™‚
Preheat your grill to medium heat for several minutes.
And grill the kabobs for 7 to 10 minutes total, flipping a few times.
They are ready when the steak end veggies are cooked how you like.
My favorite part of grilled steak fajita skewers are the charred edges on the veggies!
I was certain these would need some sort of Southwest dipping sauce, but boy was I wrong.
The marinade is so flavorful and the steak is so juicy they did not need one darn thing.

Grilled Steak Fajita Skewers
Equipment
- Grill
Ingredients
- 2 pounds steak (sirloin, strip steak, or flatiron)
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 3 to 4 cloves garlic minced
- 1 packet fajita seasoning (or homemade fajita seasoning)
- kosher salt, pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 4 to 6 kabob skewers (if wooden, soak in water for several hours)
Instructions
- Cut the steak into inch size cubes and place in a gallon size plastic bag.
- In a bowl mix together the olive oil, lime juice, soy sauce, garlic, fajita seasoning, kosher salt, and pepper. Save a few spoonfuls of this mixture for the veggies and pour the rest into the bag with the steak.
- Massage the bag until the steak is evenly coated and marinate in the refrigerator for several hours.
- Peel the onion and remove the seeds and stems from the peppers. Then cut the onion and peppers into 1 inch pieces (similar in size to the steak). Toss the marinade that was set aside earlier with the onions and peppers.
- Assemble the kabobs by alternating steak, onions, and peppers. Pour any extra marinade over top and season with kosher salt and pepper.
- Preheat your grill to medium high for several minutes. Grill the steak kabobs 7 to 10 minutes total, flipping and turning several times.
