Blackstone Chopped Chicken Bacon Subs

Blackstone Chopped Chicken Bacon Subs is a fun and easy sandwich or sub recipe for your flat top griddle, great for dinner at home or camping!

My daughter and her son came over, so I knew these would be the perfect, fun meal to have.

How to make Blackstone Chopped Chicken Bacon Subs

First preheat your Blackstone or flat top griddle to medium low.

Add 8 slices of bacon to one side and a few chicken thighs to the other side.

Season your chicken with kosher salt, pepper, and ranch seasoning.

You can also season the bacon with ranch seasoning if you’d like.

The chicken and bacon will cook on the griddle for 8 to 10 minutes total, flipping a few times.

Remove both when cooked how you like and toast the sub buns on the griddle as well.

Pile the chicken and bacon on a large cutting board and add some slices of cheese and lettuce of choice.

I have one heart of romaine lettuce with the stem removed.

Then use a large knife to chop it all together.

My daughter and I had fun with this part!

Finally a drizzle of ranch dressing, and chop for another minute until it’s all combined.

Use your griddle spatula to put this mixture into the toasted sub buns and enjoy!

Ingredients
  

  • 8 slices bacon
  • 1 1/2 pounds boneless, skinless chicken thighs or breasts
  • kosher salt, pepper, ranch seasoning blend
  • 4 sub buns
  • lettuce of choice (amount depends on your preference, I used one heart of romaine lettuce, stem removed)
  • 8 slices colby jack cheese
  • ranch dressing (amount depends on your preference)

Instructions
 

  • Preheat your griddle to medium low, add the bacon to one side and chicken to the other side. Season chicken with kosher salt, pepper, and ranch seasoning (season bacon with ranch seasoning as well if desired).
  • Cook both the chicken and bacon for 8 to 10 minutes, flipping a few times and remove once cooked how you prefer. Toast sub buns on griddle, cut side down for a minute.
  • Place cooked chicken and bacon on a large cutting board, add lettuce and cheese over top. Use a large knife to chop everything, which does take a minute or two. Add ranch dressing and chop until it's evenly combined.
  • Use a griddle spatula to fill the sub buns with this mixture and enjoy! We had a little of the chicken bacon ranch mixture leftover and enjoyed that with a fork as a bonus side dish.
