Blackstone Crispy Cheez-It Chicken
Blackstone Crispy Cheez-It Chicken has kind of a funny story behind it, it was the delicious result of a “Chopped” cooking challenge on the griddle with my friend Andy Wilson!
But since I know how everyone feels about stories before the recipe, I will keep it short 😉

How to make Blackstone Crispy Cheez-It Chicken
My sweet son and grandson were my helpers and challenge coordinators for this meal!

The secret ingredients in this cooking challenge were chicken thighs, rice, Cheez-Its, and ground cinnamon.
I did leave the cinnamon off this recipe only because it seems weird, but honestly the cinnamon did add a little something special in the Cheez-It breading so add a pinch if you’re feeling adventurous.

First lightly coat the chicken thighs in flour, dip into a beaten egg, and into the breading mixture of Cheez-Its, shredded cheese, kosher salt, and pepper that I pulsed in the food processor.

Then onto your Blackstone or flat top griddle over medium low heat with some cooking oil.
I am going with medium low heat so the breading doesn’t burn before the chicken is cooked.

Just cook these for 8 to 10 minutes, flipping a few times.

I did make some cheesy green onion rice on the griddle at the same time for this cooking challenge and it went perfectly together.

Or just stick with making the crispy chicken.

Blackstone Crispy Cheez-It Chicken
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 1/2 cups Cheez-It crackers
- 1 cup shredded cheddar cheese
- kosher salt, pepper
- 2 eggs
- 4 to 6 boneless skinless chicken thighs (or chicken breasts)
- 2 tablespoons all purpose flour
- cooking oil of choice
Instructions
- Put the Cheez-Its, shredded cheese, kosher salt, and pepper in a food processor or blender. Pulse until they are a breadcrumb consistency. Put in a bowl.
- Crack the eggs in a bowl and beat with a fork. Season the chicken with kosher salt and pepper.
- Lightly coat the chicken with the flour, dip each piece of chicken into the egg, and then into the Cheeze-It crumbs, pressing so the crumbs stick.
- Preheat your griddle to medium low heat. Add cooking oil of choice and the breaded chicken. Cook 8 to 10 minutes, flipping a few times.Note: I served these over cheesy rice that I also made on the griddle at the same time as the chicken. Add two microwave pouches of Jasmine rice to the griddle (I did not microwave the rice first), add some water and cover with a melting dome for 5 minutes. Remove the dome a few times to mix and add more water. Set dome aside and add green onions, kosher salt, pepper, some shredded cheddar cheese, and about 1/3 cup of milk or heavy cream. Mix together on the griddle for a few minutes.
