Blackstone Alice Springs Chicken
This chicken recipe for the griddle is a copycat from Outback restaurants, Blackstone Alice Springs Chicken!
It’s a very popular menu item at Outback… basically chicken topped with honey mustard, mushrooms, bacon, and cheese!
I mean, what can be bad about that, right?!
This griddle or flat top version is ready in just a few minutes and oh so yummy 🙂
How to make Blackstone Alice Springs Chicken
We have some thin cut chicken breasts, honey mustard, mushroom, bacon, and Colby Jack cheese.
Pretty simple so far as far as ingredients.
Especially by using the store bought honey mustard instead of making our own.
Cut the bacon into bite size pieces and place all the ingredients on a tray to easily carry out to the griddle or flat top grill.
First preheat the Blackstone (or your brand of griddle) to medium heat.
Then add a little cooking oil, the cut bacon, and the mushrooms.
These will cook 7 to 9 minutes, flipping a few times with hibachi spatulas.
Remove this topping and set aside once they are cooked how you like.
Then add a little more cooking oil and the thin chicken breasts.
Season both sides with kosher salt and pepper.
You could certainly start the chicken while the mushrooms and bacon were cooking, but I wasn’t in a rush so I cooked them separate.
Cook the chicken 6 to 8 minutes total, kind of depending on how the thickness.
Now we top the chicken!
Add some honey mustard first, the cooked bacon and mushrooms, and more honey mustard.
Finally a slice of Colby Jack cheese over each.
Cover with a melting dome until melted.
Blackstone Alice Springs Chicken certainly is a darn good looking dinner on the griddle!
A little sprinkle of green onions, chives, or parsley makes it even prettier.
I served these with diced potatoes and cornbread for a complete meal.
And more honey mustard on the side for dipping 🙂

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 6 slices bacon cut into bite size pieces, I used kitchen scissors
- 8 ounces sliced mushrooms
- 4 thin cut chicken breasts
- kosher salt, pepper
- 1/2 cup store bought honey mustard sauce
- 4 slices Colby Jack cheese
- Optional: chives for garnish, more honey mustard
Instructions
- Preheat the griddle to medium for a few minutes. Add a little cooking oil, the pieces of bacon, and the mushrooms. Cook 7 to 9 minutes, mixing together with hibachi spatulas. Remove and set aside.
- Add more cooking oil and the chicken breasts. Season both sides with kosher salt and pepper. Cook 6 to 8 minutes, flipping a few times.
- Drizzle some honey mustard on the chicken and top each with the bacon, mushrooms, more honey mustard and a slice of cheese. Cover with a melting dome until the cheese melts. Garnish with chives and serve with more honey mustard if desired.
