Blackstone Chicken Pesto Sandwiches
A simple dinner ready in a few minutes thanks to the griddle… Blackstone Chicken Pesto Sandwiches is my recipe today for you!
I made some Basil Walnut Pesto and froze it a few weeks ago.
So that’s what I am using for these sandwiches, but store bought pesto will do just fine.
How to make Blackstone Chicken Pesto Sandwiches
For the bread, I am using store bought ciabatta rolls.
And you’ll also need four thin cut chicken breasts and some fresh mozzarella cheese.
Simple enough ingredients, right?!
First season the thin cut chicken breasts with kosher salt, pepper, and all purpose seasoning blend of choice.
I am actually using a brisket seasoning.
Then slice the rolls in half and slice the cheese into 8 slices.
Place everything on a tray and head out to the griddle or flat top grill.
Preheat the griddle to medium for a few minutes.
Then add cooking oil of choice, I went with olive oil, and the thin chicken breasts.
The chicken will cook for 6 to 8 minutes total, flipping a few times.
While the chicken is cooking, place the rolls cut side down on the griddle for a minute to slightly toast them.
Then remove the rolls and spread some pesto on both the top and bottom of each roll.
Next add the bottom half of each roll back to the griddle and place a chicken breast on each.
Then top with two slices of mozzarella and the top bun.
And use a burger press to press down ever so slightly.
Cover with a melting dome for a few minutes to help the cheese melt.
Flip the sandwiches and cover again with the melting dome.
If you think the rolls may toast too much, just turn the griddle off while the cheese melts.
Blackstone Chicken Pesto Sandwiches are full of ooey gooey melty cheese!
They are a messy sandwich, but that’s part of the fun 🙂

Blackstone Chicken Pesto Sandwiches
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 4 thin cut chicken breasts
- kosher salt, pepper, all purpose seasoning blend of choice
- cooking oil of choice
- 4 ciabatta rolls sliced in half
- 1 cup pesto (store bought or link to homemade recipe in post above)
- 8 ounces fresh mozzarella cheese cut into 8 slices
Instructions
- Season both sides of the chicken with kosher salt, pepper, and your seasoning blend of choice.
- Preheat the griddle to medium heat. Add some cooking oil and the chicken. Cook the chicken 6 to 8 minutes total, flipping a few times.
- Put the rolls cut side down on the griddle for a minute. Then remove them and spread some pesto on the top and bottom buns. Put the bottom buns back on the griddle and top each with a chicken breast, two slices of mozzarella, and the top bun.
- Use a burger press to flatten slightly. Cover with a melting dome for a minute or two. Flip them and cover again with the melting dome until the cheese is melted.Note: If you think the buns will get too toasty before the cheese melts, just turn the griddle off.
