Traeger 0 to 400 Chicken Wings
My husband told me about a new method for cooking crispy chicken wings that a friend told him about, Traeger 0 to 400 Chicken Wings he called them.
You know how husbands are, though… he didn’t exactly remember all the cooking details 😉
So I took this basic idea, recipe tested a few batches (which neither of us minded much), and perfected my own recipe for 0-400 wings 🙂
I didn’t specify an exact seasoning, because if I know you smoker and pellet grill fanatics like I think I do… ya’ll have a serious collection of allllllll the seasoning blends and dry rubs already waiting for you to try.
How to make Traeger 0 to 400 Chicken Wings
I am starting with 3 pounds of jumbo split chicken wings.
First, pat dry the wings dry very well with paper towels.
This was important step that I discovered while recipe testing to get a decent wing crisp.
Then season with about 3 tablespoons of your favorite dry rub or seasoning blend.
Add some kosher salt and pepper if needed.
This will depend on the salt content of your seasoning blend.
Then put the wings on the grill grate of your Traeger or pellet grill before you even turn it on.
Set the Traeger to 400 degrees, or to 375 if your model of pellet grill doesn’t reach 400 degrees.
Start your timer right away, like when it’s still at 0 degrees, for 40 minutes.
Flip them with tongs after the 40 minute mark.
And set the timer for another 20 minutes.
At this point they may be perfectly crisp and with an internal temperature above 165 degrees.
Or you may decide the leave them on a little longer to achieve desired crispness and temperature.
I’ll have to say, Traeger 0 to 400 Chicken Wings may be my new favorite method!
You can enjoy these just with the dry rub, or toss them in your favorite wing sauce.

Traeger 0 to 400 Chicken Wings
Equipment
- Traeger/Pellet Grill
Ingredients
- 3 pounds jumbo split chicken wings
- 3 tablespoons dry rub or seasoning blend of choice
- kosher salt, pepper (if needed, depends on salt content of your seasoning blend)
- wing sauce of choice
Instructions
- Pat the chicken wings dry very well with paper towels. Season the wings on all sides with the dry rub or seasoning blend and kosher salt and pepper if needed.
- Place the wings on your pellet grill, then turn your pellet grill on and set the temperature to 400 degrees (or 375 degrees if your Traeger model doesn't reach 400). Set a timer for 40 minutes (when the pellet grill is still at 0 degrees).
- Flip the wings using tongs, then set a timer for 20 more minutes. Check the wings and remove them once they are crisped how you prefer and the internal temperature is above 165 degrees.
- Toss the wings in your wings sauce of choice and serve.
