Blackstone Spinach and Artichoke Chicken

Everyone loves spinach and artichoke dip in my house, so I turned it into a complete dinner recipe on the griddle 🙂 Blackstone Spinach and Artichoke Chicken was fabulous!

Making dinner on the Blackstone griddle or flat top grill is just fun, so I can feed my family and it doesn’t even feel like a chore 🙂

My biggest tip or trick for griddle cooking is to prepare all your ingredients ahead of time so it’s all ready to go.

How to make Blackstone Spinach and Artichoke Chicken

First cut 1 1/2 pounds of boneless, skinless chicken thighs into bite size pieces.

You can use chicken breasts, of course, but we just love the thighs.

Dice an onion, mince some garlic, roughly chop some spinach, and measure out a cup each of heavy cream and shredded parmesan cheese.

I also chopped a can of artichoke hearts, but bought my mushrooms already sliced.

Once it’s all ready, put everything on a tray and head out to your griddle.

Preheat to medium heat for several minutes.

Then add some cooking oil of choice along with the chicken, onion, and mushrooms.

Season with kosher salt, pepper, Italian seasoning, and crushed red pepper flakes.

Cook for 5 to 6 minutes, mixing together with hibachi spatulas a few times.

Next add the spinach, artichokes, and garlic.

Mix it all together and cook on the griddle for another 2 to 3 minutes.

Finally pour on the cream and sprinkle on the parmesan cheese, plus a little more kosher salt, pepper, Italian seasoning, and crushed red pepper flakes.

The cream will thicken into a sauce as it cooks, but you may need to use your hibachi spatulas to contain it at first.

Cook together for another minute or two, mixing together a few times, and then remove from the griddle using the hibachi spatulas or a scoop.

I just put it back on the same tray I used to carry out the ingredients.

Ingredients
  

  • cooking oil of choice
  • 1 1/2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
  • 1 onion diced
  • 8 ounces sliced mushrooms
  • kosher salt, pepper, Italian seasoning, crushed red pepper flakes
  • 1 14 ounce can or jar artichoke hearts liquid drained and chopped
  • 8 ounces chopped, fresh spinach
  • 6 to 7 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup shredded parmesan cheese

Instructions
 

  • Preheat your griddle to medium heat for a few minutes. Add some olive oil, the chicken, onion, mushrooms, kosher salt, pepper, Italian seasoning, and crushed red pepper flakes. Cook 5 to 6 minutes, mixing it all together with hibachi spatulas.
  • Add the artichokes, spinach, garlic, and more cooking oil if needed. Cook 2 to 3 minutes, mixing together as it cooks.
  • Add the heavy cream, parmesan cheese, and more kosher salt, pepper, Italian seasoning, and crushed red pepper flakes. Mix together and cook another 1 to 2 minutes.
    Note: The cream will thicken into a sauce, but use hibachi spatulas to keep the cream contained if needed at first.
