Blackstone Lemon Feta Chicken and Potatoes
A pretty simple and healthy dinner recipe on the griddle made by my teenage son, you’ll for sure want to to try Blackstone Lemon Feta Chicken and Potatoes!
Nothing flashy or complicated with this dish, but the bright lemon flavor paired with the feta cheese was quite a spectacular combo.
This recipe is also perfect for meal prepping.
How to make Blackstone Lemon Feta Chicken and Potatoes
I like to prepare all of my ingredients before heading out to the Blackstone griddle or flat top grill.
We are using 2 pounds of chicken thighs that I just cut into bite size pieces.
Then about a pound of diced red skin potatoes.
Some Italian seasoning, minced garlic, fresh lemon juice, and crushed red pepper flakes to kick up the spice a little.
Preheat your griddle to medium heat for a few minutes.
Then add some cooking oil of choice and the potatoes, season with kosher salt, pepper, and crushed red pepper flakes.
Squirt some water on the taters and cover with a melting dome (or a foil pan works too).
They will cook 6 to 7 minutes total, removing the dome to flip them a few times.
And adding a bit more water each time as well.
Now we add the chicken along with more cooking oil, kosher salt, pepper, and crushed red pepper flakes.
Cook another 6 to 7 minutes, mixing together a few times with hibachi spatulas.

Finally, season with Italian seasoning, minced garlic, and lemon juice.
Then cook a few more minutes.
Top with feta cheese crumbles and we are ready to dig in!

You could serve with more lemon wedges, or the teens dipped theirs in ranch.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 pound redskin or gold potatoes cut into bite size pieces
- kosher salt, pepper, crushed red pepper flakes
- 2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 5 to 7 cloves garlic minced
- 3 to 4 tablespoons lemon juice
- 1 tablespoon Italian seasoning
- 4 ounces crumbled feta cheese
Instructions
- Preheat the griddle to medium heat for a few minutes. Add some cooking oil, the potatoes, kosher salt, pepper, crushed red pepper flakes, and some water. Cover with a melting dome and cook 6 to 7 minutes. Remove the dome a few times to flip the potatoes and add more water each time before covering again.
- Set the melting dome aside and add more cooking oil, the chicken, and more kosher salt, pepper, and crushed red pepper flakes. Cook together 6 to 7 more minutes, mixing together with hibachi spatulas a few times.
- Add the garlic, lemon juice, Italian seasoning, and cook another 2 to 3 minutes. Top with the feta cheese before serving.
