
Blackstone Griddle Chicken Fajitas
Chicken fajitas made at home are healthier, tastier, cheaper, and more fun in my opinion! You gotta try this easy recipe for Blackstone Griddle Chicken Fajitas!
You can use boneless, skinless chicken breasts, but I much prefer the thighs to make this meal even more budget friendly.
And use whatever fajita seasoning you prefer; I couldn’t decide between the Blackstone Fajita seasoning and the Tequila Lime so I used both.

How to make Blackstone Griddle Chicken Fajitas
Start by slicing 1 1/2 pounds chicken, a red pepper, green pepper, and an onion.
And mince a few cloves of garlic.
Preheat your Blackstone or flat top griddle to medium heat.

Add some cooking oil of choice along with the peppers and onions and cook for about 2 minutes.
Mixing a few times with spatulas.

Then add the sliced chicken, kosher salt, pepper, and your favorite fajita or taco seasoning blend.

Cook for about 6 minutes, mixing a few times.
Then add the minced garlic and cook together for another 2 minutes.

I like to warm my flour tortillas on the griddle during the last minute.

For a low carb version, you can enjoy this dinner just like this.

Or serve in flour tortillas with toppings of choice.

We serve Blackstone Griddle Chicken Fajitas in warm tortillas with lettuce, sour cream, and cheese 🙂
Of course, guacamole, salsa, hot sauce, and/or jalapeños are also excellent topping choices!

Blackstone Griddle Chicken Fajitas
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 onion sliced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 1/2 pounds boneless, skinless chicken thighs or breasts sliced
- kosher salt, pepper, fajita or taco seasoning blend (I used Blackstone Tequila Lime and Fajita seasoning blends)
- 5 cloves garlic minced
- 12 taco or fajita sized flour tortillas,
- Toppings of choice: shredded lettuce, cheese, guacamole, salsa, hot sauce, sour cream
Instructions
- Preheat your griddle to medium heat. Add cooking oil of choice and the sliced peppers and onions. Cook 2 minutes, mixing together with spatulas.
- Add the sliced chicken, kosher salt, pepper, and fajita or taco seasoning to taste. Cook for about 6 minutes, mixing everything together with spatulas.
- Add the minced garlic and cook 2 more minutes, mixing a few times. Warm the tortillas on empty space of Blackstone during the last minute.
- Serve with chicken and veggies in the tortillas, top each with toppings of choice such as shredded lettuce, cheese, guacamole, salsa, hot sauce, and/or sour cream.
