This super easy recipe for Blackstone Island Chicken Bites is a simple dinner idea for the griddle.

Or use them for meal prepping, to top a salad or nachos, or in a wrap.

How to make Blackstone Island Chicken Bites

Put 2 pounds of diced chicken in a gallon size plastic bag.

Add kosher salt, pepper, Island or Caribbean Jerk seasoning (to taste), garlic, soy sauce, brown sugar, and lime juice.

Massage the bag until mixed and marinate for at least an hour, or up to overnight.

When ready to cook, preheat your Blackstone or flat top griddle to medium.

Then add cooking oil of choice and the seasoned chicken.

Cook this for 8 to 10 minutes, mixing with spatulas a few times.

Ingredients
  

  • 1 1/2 to 2 pounds boneless, skinless chicken thighs cut into bite size pieces
  • kosher salt, pepper, Blackstone Island Stir Fry seasoning blend (or any Caribbean Jerk seasoning)
  • 5 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • cooking oil of choice

Instructions
 

  • Put chicken in a gallon size plastic bag. Add kosher salt, pepper, Island or Caribbean Jerk seasoning (to taste), garlic, soy sauce, brown sugar, and lime juice.
  • Massage the bag until evenly combined and marinate in the fridge for an hour, or overnight.
  • Preheat griddle to medium. Add cooking oil and the seasoned chicken. Cook 8 to 10 minutes, mixing with spatulas a few times. Taste for seasoning and add more Island or Caribbean Jerk seasoning if needed.
  • Serve as is, or over rice with veggies, as a wrap, or on salads. Also great for meal prepping.
