Pork Shoulder Burnt Ends

Pork shoulder burnt ends are a must-make recipe for anyone with a smoker or pellet grill!

Burnt ends are typically made with cuts of meat that are best cooked low and slow.

Such as brisket, pork belly, and chuck roast… or in this case we are using a pork butt.

The pork shoulder is not nearly as fatty as pork belly or brisket, but still becomes nice and tender.

How to make pork shoulder burnt ends

First cut a 4 pound pork butt into 1 or 2 inch cubes and place in a bowl.

Then add a cup of brown sugar, 1/2 cup of your favorite barbecue seasoning, 1/4 cup olive oil, 1 to 2 tablespoons yellow mustard, kosher salt, and pepper.

Mix this together until the pork is evenly coated.

We will cook the burnt ends two different ways on the smoker or pellet grill.

First set it to 225 degrees and place the cubes of pork shoulder on the grate for two hours.

Ohhh, and use tongs to flip them halfway through.

Then remove the burnt ends and place in a 9×13 foil pan.

Add a cup of your favorite barbecue sauce, 1/4 cup honey, and 3 tablespoons of butter.

Mix this together, cover with foil, and place back on the smoker or pellet grill for 1 1/2 to 2 more hours, still set to 225 degrees.

Ingredients
  

  • 4 pound pork shoulder/ pork butt
  • 1/4 cup olive oil
  • 1 cup brown sugar
  • 1/2 cup BBQ seasoning
  • 1 to 2 tablespoons yellow mustard
  • kosher salt, pepper
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 3 tablespoons butter cut into smaller pieces

Instructions
 

  • Trim some of the thicker pieces of fat from the pork and cut into 1 to 2 inch cubes.
  • Put the pork cubes in a large bowl and add the olive oil, brown sugar, BBQ seasoning, yellow mustard, kosher salt, and pepper. Toss until evenly coated.
  • Set the smoker or pellet grill to 225 degrees, place the pork bites on the smoker grates for 2 hours, flipping them halfway through.
  • Remove the pork bites and place in a 9×13 foil pan. Add the BBQ sauce, honey, and butter. Toss until evenly combined and cover with foil.
  • Place the covered foil pan back onto the smoker at 225 degrees for 1 1/2 to 2 more hours.
