Blackstone Turkey Sweet Potato Tacos
This recipe for Blackstone Turkey Sweet Potato Tacos is part of my Blackstone High Protein Meal Prep Series, so the turkey and sweet potatoes were already cooked when I assembled these tacos.

How to make Blackstone Turkey Sweet Potato Tacos
Preheat your Blackstone or flat top griddle to medium.
Add cooking oil, diced sweet potatoes, kosher salt, pepper, taco seasoning, and squirt some water over top.
Cover with a melting dome for 8 to 9 minutes.
Remove the dome a few times to mix with spatulas and add more water before covering again.

Set the dome aside and add a pound of ground turkey and plenty of taco seasoning to an empty space on your griddle.
Cook both the turkey and potatoes for 5 to 8 more minutes, mixing sweet potatoes a few times and breaking apart the turkey with spatulas.

I made a way bigger batch, packed it all up, and used it in 4 meals throughout the week, making it super quick and easy to eat healthy without it feeling boring.

To assemble the tacos, start with your griddle over low/ medium low heat.
And have your ingredients handy because the taco building goes quick!

Spread more cooking oil on your griddle surface and place 6 to 8 soft taco size flour tortillas.
Add shredded cheese to each entire tortilla and the black beans, sweet potatoes (flatten slightly with a fork), turkey taco meat, and cilantro and taco sauce if using.
I used my High Protein Creamy Taco Sauce.

Fold the cheesy side over the filled side with your spatulas, flip a few times, and cook until cheese is melted and tortillas are cooked how you prefer.
Serve with more taco sauce if desired and lime wedges to squeeze over top.

Blackstone Turkey Sweet Potato Tacos
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 sweet potato diced, skin on
- kosher salt, pepper, taco seasoning blend
- 1 pound ground turkey
- 6 to 8 soft taco size flour tortillas
- 2 cups shredded cheese of choice
- 1 cup black beans (I used canned, rinsed and drained)
- Optional: cilantro, taco sauce (I used my High Protein Creamy Taco Sauce, recipe in post above), lime wedges
