
Blackstone BBQ Chicken Bites
If you’re looking for an easy dinner on the griddle or a great meal prep recipe, Blackstone BBQ Chicken Bites might be perfect for you.
Some of my griddle recipes are fancier or more involved, but this one is a simple weeknight meal with very little prep or fuss.
Or great for topping salads, in a chicken wrap, or served with rice or veggies in containers for easy meal prepping.
A marinade ready in minutes, and a quick cook on the griddle and these chicken bites are ready to go… how you enjoy them is up to you.
How to make Blackstone BBQ Chicken Bites
First, cut 2 pounds of boneless, skinless chicken thighs (or chicken breasts) into bite size pieces.
Then put them in a gallon size plastic bag for mess free marinating.
To the bag with the chicken add some Worcestershire sauce, apple cider vinegar or lime juice, and fresh minced garlic.
Also kosher salt, pepper, and plenty of your favorite BBQ seasoning blend.

Massage the bag until the chicken bites are evenly coated.
Marinate in the fridge for at least an hour, or overnight.

Preheat the Blackstone griddle or flat top grill to medium heat for several minutes.
Once hot, add some cooking oil of choice and the seasoned chicken.

Cook the chicken on the griddle for 7 to 10 minutes total.
Turn and flip them a few times with hibachi spatulas a few times for even cooking.

Serve Blackstone BBQ Chicken Bites with BBQ sauce for dipping if desired!

Blackstone BBQ Chicken Bites
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 pounds boneless skinless chicken thighs (or chicken breasts)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon apple cider vinegar (or lime juice)
- 4 to 5 cloves garlic finely minced
- kosher salt, pepper, BBQ seasoning blend
- cooking oil of choice
- Optional: BBQ sauce for dipping
Instructions
- Cut the chicken into bite size pieces and place in a gallon size plastic bag.
- Add the Worcestershire sauce, vinegar or lime juice, garlic, kosher salt, pepper, and plenty of BBQ seasoning to the bag with the chicken. Massage the bag until evenly coated and marinate for at least an hour or overnight in the fridge.
- Preheat the griddle to medium heat for several minutes. Add some cooking oil of choice and the chicken bites. Cook 7 to 10 minutes, flipping and turning a few times with hibachi spatulas.
- Serve the chicken bites with BBQ sauce for dipping if desired. Or use to top salads, in a chicken wrap, or with rice and veggies in containers for meal prepping.
