Easy Blackstone Shrimp Pad Thai
Pad Thai is one of my favorite dishes! Typically it’s a bit more time consuming to prepare, but with this easy Blackstone shrimp pad Thai recipe, dinner will be ready in no time!
I may call it easy, it’s OK if you call it lazy đŸ˜‰ … but I am cutting some corners here by using a store bought pad Thai sauce from a jar.
Authentic? Not really
Worth taking the easy way out to have a delicious weeknight dinner ready in minutes?
Totally!
Of course you can easily follow this same recipe with your own tasty homemade sauce if you prefer.
How to make easy Blackstone shrimp pad Thai
First soak the noodles in hot water according to package directions.
I brought my hot water almost to a boil and poured over the noodles and let them soak for 10 minutes.
While the noodles were soaking I put all of my ingredients on a tray ready to carry out to my Blackstone griddle area.
I find that one of the ways you can be most successful with griddle cooking is having everything prepared and ready to go.
And by putting everything on a tray it’s one trip out and one trip in if you put the cooked noodles back on the same tray.
I suppose this tip or trick (whatever you want to call it) is part of the “easy” in this recipe.
Preheat the griddle to medium high heat for several minutes.
And once hot add some cooking oil of choice.
Then add a diced onion, a sliced red bell pepper, and some shredded carrots.
After the veggies cook for a few minutes add in a pound and a half of peeled and deveined shrimp.
I added some minced garlic, kosher salt, pepper, and crushed red pepper flakes to the shrimp as well.
Cook the seasoned shrimp and veggies for just about a minute.
And then crack three eggs and add some sliced green onions
I like for the green onions to be noticeable so I cut them in two inch pieces.
Use hibachi spatulas to flip and mix everything together breaking apart the egg.
Then cook this for a few more minutes.
Finally add in the partially cooked pad Thai noodles, the jar of pad Thai sauce, chicken broth or water, soy sauce, and fresh lime juice.

After just a few minutes of cooking and a few minutes of prep work, this gorgeous noodle dish is what we have to show for our efforts.
Even though our efforts were minimal đŸ˜‰
Garnish easy Blackstone shrimp pad Thai with some fresh cilantro and chopped peanuts before serving!
And if you like a little extra spice I recommend drizzling some chili oil or sriracha over top to really bring the heat.
This serves quite a few people!
If you do have some leftover I recommend adding some chicken broth or maybe some more soy sauce because the noodles do tend to dry out after they sit in the fridge overnight.

Easy Blackstone Shrimp Pad Thai
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 12 oz pad Thai noodles
- cooking oil of choice
- 1 onion diced
- 1 red bell pepper sliced
- 2/3 cup shredded carrots
- 4 to 5 cloves garlic minced
- 1 1/2 pounds jumbo shrimp peeled and deveined
- kosher salt, pepper, crushed red pepper flakes
- 3 eggs
- 4 to 5 green onions cut into 2 inch pieces
- 1 8 oz jar Pad Thai sauce (Asian section of grocery store)
- 1/4 cup chicken broth or water
- 1 to 2 tablespoons soy sauce
- 1 to 2 tablespoons lime juice
- Toppings: chopped peanuts, cilantro, chili oil or sriracha, lime wedges
Instructions
- Soak the pad Thai noodles according to package directions. They will not be cooked all the way but that's OK they will finish cooking on the griddle.
- Put all of the ingredients on a tray and head out to the Blackstone griddle. Preheat the griddle to medium high heat for several minutes.
- Once the griddle is hot add some cooking oil of choice, diced onions, sliced red pepper, shredded carrots. Cook 2 to 3 minutes stirring and flipping with hibachi spatulas.
- Add the garlic, shrimp, kosher salt, pepper, crushed red pepper flakes and cook 1 minute. Then add the eggs and green onion cook 1 to 2 more minutes stirring and flipping everything together with hibachi spatulas.
- Add the pad Thai noodles, pad Thai sauce, chicken broth or water, soy sauce, and lime juice and cook 2 to 3 more minutes flipping and stirring everything together with hibachi spatulas.
- Serve with toppings such as chopped peanuts, cilantro, chili oil, sriracha, and or lime wedges.
