Smoked Chili Walking Taco Casserole
Smoked Chili Walking Taco Casserole is an incredible game day snack recipe… or live a little and serve this as a fun, snacky dinner!
We enjoyed this made with some Skyline chili as we watched the Bengals game (WHO DEY!!) because if you’re from Cincinnati, you just know!
Nothing goes better in a Bengals game day recipe than Skyline Cincinnati style chili 😉
My son literally devoured this in record time, even asked for it as his birthday dinner, and claimed this to be mom’s newest BEST recipe!
I even included oven directions in the recipe card so ALL my Cincinnati friends can enjoy this amazing dish!
How to make Smoked Chili Walking Taco Casserole
You’ll need a block of cream cheese, chili powder, cumin, a can of Cincinnati style chili, shredded cheese, and some Fritos.
If you can’t get the Skyline or Cincinnati style chili, you could substitute 2 cups of homemade chili.
First put the cream cheese in a 9×9 (or similar size) dish (use foil dish for easy cleanup).
Score the cream cheese with a knife and season with some chili powder and cumin.
Then preheat your smoker or Traeger pellet grill to 225 to 250 degrees.
Set the super smoke setting if that’s an option for your smoker or pellet grill.
And let this smoke for 45 minutes to an hour.
You can see better in this “after” picture the scored marks, which allows more smoke penetration.
Then use the back of a spoon to spread it evenly in the dish.
And pour in your chili of choice (which for me is Skyline).
Spread it evenly and let this go on the smoker for another 45 minutes to an hour.
Next we will add about half a bag of Fritos.
Just add as much as you’d like.
And set out the rest of the bag when serving.
And 1 1/2 to 2 cups of shredded cheese.
Then let this go another 10 to 15 minutes or until the cheese is melted.
Smoked Chili Walking Taco Casserole should be served right away with toppings of choice 🙂
So regular walking tacos are served in individual chips bags with meat and toppings.
To serve this, scoop out what you’d like on a plate or bowl.
Then add some toppings like lettuce, hot sauce, sour cream, jalapenos. and more Fritos.
The Fritos in the casserole stay slightly crisp, but adding more Fritos adds to the crunch if you prefer that.

Smoked Chili Walking Taco Casserole
Equipment
- Traeger/Pellet Grill
- Smoker
Ingredients
- 1 8 ounce block cream cheese
- chili powder, cumin
- 1 15 ounce can Cincinnati style chili like Skyline (or 2 cups homemade chili)
- 1 9.25 ounce bag Fritos
- 1 1/2 to 2 cups shredded cheddar or Mexican blend cheese
- Toppings of choice such as the remaining Fritos, shredded lettuce, hot sauce, sour cream, jalapeno slices
Instructions
- Put the block of cream cheese in the middle of a 9×9 dish or foil pan (or similar size). Cut diagonal about half inch deep with a knife in both directions (picture example in post above) and season it with chili powder and cumin.
- Preheat your smoker or pellet grill to 225 or 250 degrees. Put the pan with the cream cheese on the grill grate for 45 minutes to an hour.
- Spread the cream cheese evenly in the dish and pour the chili evenly over top. Let it smoke for another 45 minutes to an hour.
- Add about half of the Fritos and the shredded cheese and smoke another 10 to 15 minutes.
- Serve the walking taco casserole right away by scooping some on a plate or bowl and with toppings of choice such as the remaining Fritos, shredded lettuce, hot sauce, sour cream and/or jalapeno slices. Dig in with a fork and enjoy!
