Blackstone Ham Potatoes and Green Beans
This recipe is a classic comfort food dish with a makeover to be cooked on the griddle… Blackstone Ham Potatoes and Green Beans!
I’ve always made this on the stove or slow cooker.
But let me just tell you, friends… it give a whole different flavor vibe on the griddle or flat top grill.
How to make Blackstone Ham Potatoes and Green Beans
A pound each of red skin potatoes, thick cut ham steaks, and green beans is what we are starting with.
Also a few garlic cloves, an onion, butter, and Old Bay seasoning.
First prepare all of your ingredients and place on a tray to easily carry outside and back inside again.
Dice the onion, mince the garlic, and trim the green beans.
I also cut the longer green beans in half.
Then cut the ham and potatoes in about inch size pieces.
Preheat your griddle or flat top grill to medium heat for several minutes.
Then add some cooking oil of choice, the potatoes, and season them with kosher salt, pepper, and Old Bay.
Cover them with a melting dome with a little water to steam them for 5 to 6 minutes.
Flip the potatoes a few times and add more water when re-covering with the melting dome.
If you don’t have a melting dome, fear not… a foil pan works great if you are careful not to touch it when removing it.
Then add a little more cooking oil, the green beans, diced onions, and more kosher salt, pepper, and Old Bay.
Cook this for 6 to 7 minutes, flipping and mixing with those handy dandy hibachi spatulas.
Next add the garlic and ham.
Oh, and 4 tablespoons of butter.
Cook another 3 to 4 minutes on the griddle… and you guessed it, flipping and mixing with the spatulas.
Taste Blackstone Ham Potatoes and Green Beans for seasoning and add more kosher salt, pepper, and /or Old Bay if needed.
Serve with some lemon wedges to squeeze over top.
This is not how I traditionally served this dish but the lemon is oh so yummy and adds that pop of freshness.
I also baked some crescent rolls for the perfect complete comfort food meal 🙂

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 pound red skin potatoes cut in inch size pieces, skins on
- kosher salt, pepper, Old Bay seasoning
- 1/2 cup water
- 1 pound green beans trimmed
- 1 onion diced
- 1 pound thick sliced ham steak cut in inch size pieces
- 5 to 7 cloves garlic minced
- 4 tablespoons butter
- lemon wedges to squeeze over top
Instructions
- Prep all the ingredients and put them on a tray to carry out to the griddle.
- Preheat the griddle to medium heat for several minutes. Add some cooking oil of choice and the potatoes, season them with kosher salt, pepper, and Old Bay seasoning.
- Cook the potatoes on the griddle for 5 to 6 minutes, cover them with a melting dome as they cook, add some water under the dome to steam them. Flip them a few times with hibachi spatulas and add more water a few times.Note: If you don't have a melting dome, a foil pan works. Just be careful touching it as it will be hot.
- Remove the melting dome and add more cooking oil, the green beans, onions, and season with more kosher salt, pepper, and Old Bay seasoning. Cook together with the potatoes for 6 to 7 more minutes, flipping and mixing a few times.
- Add the ham, garlic, and butter. Cook 3 to 4 more minutes, flipping and mixing together on the griddle a few times. Taste for seasoning and add more kosher salt, pepper, and/or Old Bay if needed.
- Serve with lemon wedges to squeeze over top.Note: We also served with baked crescent rolls.
