Blackstone Cajun Chicken and Peppers
Blackstone Cajun Chicken and Peppers is one of the easiest dinner recipes of all time!
I have made this as a sheet pan dinner in the oven before, and thought it would be SOOOO much easier on the griddle!
Not only was it easier… it also had more flavor thanks to the seasoned griddle and char marks (aka- free flavor 😉 ).
You can enjoy this simple meal as it is or serve as tacos or even lettuce wraps to keep things low carb and keto friendly 🙂
How to make Blackstone Cajun Chicken and Peppers
I have some boneless, skinless chicken breasts that I sliced up.
Also slice a red bell pepper, orange bell peppers, an onion, and two jalapeno peppers.
Leave some seeds in the jalapeno, or take them all out depending on your spice preference.
Then mince a few garlic cloves… that’s really all the prep work involved.
I like to put all of my prepped ingredients on a tray to easily carry out to the Blackstone griddle or flat top grill.
Be sure to include the Cajun seasoning, Tabasco or cayenne pepper sauce, and lime wedges.
First preheat the griddle to medium heat for a few minutes.
Then add some cooking oil of choice, the sliced peppers, onions, and chicken.
Also some Cajun seasoning, kosher salt, and pepper (just season according to your spice preference).
This will cook 6 to 7 minutes, flipping and mixing with your hibachi spatulas.
Add the minced garlic, lime juice, and cayenne pepper sauce.
Then cook 2 to 3 more minutes.
I set up a taco bar to serve the chicken and peppers.
Toppings were simple enough… cheese, lettuce, and sour cream along with flour tortillas.

Blackstone Cajun Chicken and Peppers
Equipment
- Flat Top Grill/ Griddle
- Blackstone Griddle
Ingredients
- cooking oil of choice
- 1 1/2 pounds boneless, skinless chicken breasts sliced into smaller pieces
- 1 onion sliced
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
- 2 jalapeno peppers sliced (seeds removed or leave some in for added spice)
- kosher salt, pepper, Cajun seasoning blend
- 4 to 5 cloves garlic minced
- 2 tablespoons lime juice
- a few dashes Tabasco sauce or cayenne pepper sauce
- Optional: flour tortillas, Boston lettuce (for lettuce wraps), sour cream, and/or shredded cheese
Instructions
- Prepare your ingredients and place everything on a tray or baking sheet. Carry it all out to the griddle on the tray.
- Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice and the chicken, onion, and the peppers. Season with kosher salt, pepper, and some Cajun seasoning. Cook 6 to 7 minutes, flipping and turning a few times with hibachi spatulas.
- Add the garlic, lime juice, and Tabasco or cayenne pepper sauce and cook 2 to 3 more minutes. Taste for seasoning and add more kosher salt, pepper, and/or Cajun seasoning if needed.
- Serve as is or as tacos or lettuce wraps with flour tortillas, Boston lettuce (for lettuce wraps), sour cream, and/or shredded cheese.
