Little Smokies Stuffed Jalapenos
For special occasions I make special food, and these Little Smokies Stuffed Jalapenos on the Traeger pellet grill/ smoker were amazing!
Grandkids are the BEST!
My sweet granddaughter just turned TWO, so of course this GiGi had to bring something yummy to the party đŸ™‚
And ya can’t go wrong with anything stuffed with cheese, wrapped in bacon, and with little smokies tucked in the center!
How to make Little Smokies Stuffed Jalapenos
The ingredients are fairly simple.
Making them is more a labor of love, but well worth the effort đŸ˜‰
Jalapenos, cream cheese and shredded cheese, bacon, BBQ seasoning, and of course the little (or Li’l to be exact) smokies!
The filling is just cream cheese, a cup of shredded cheese of choice, and some BBQ seasoning blend.
Just mix together, I used the back of a spoon to blend it all up.
Also, it helps a lot if the cream cheese is at room temperature.
Then cut the jalapenos in half lengthwise.
And scoop or scrape the seeds and white ribs from the jalapenos.
I left some seeds for a slight spice.
Next fill each jalapeno half with the cheesy filling.
Then add a little smokie in the center.
And wrap a half slice of bacon around each, overlapping slightly.
They look like little bacon seatbelts, securing the cocktail sausages in place đŸ™‚
A sprinkle of BBQ seasoning over top and next stop is the Traeger pellet grill or smoker!
Set the pellet grill or smoker to 250 degrees.
And place them on the grill grate for about 2 hours.
No need to flip or turn them at all.
Remove Little Smokies Stuffed Jalapenos from the smoker when the bacon is cooked how you prefer đŸ™‚
These are great served warm or at room temperature.
So they are perfect to make ahead of time or to bring to a party or celebration.
Just be prepared that they will NOT last long đŸ˜‰

Little Smokies Stuffed Jalapenos
Equipment
- Traeger/Pellet Grill
- Smoker
Ingredients
- 30 jalapenos
- 1 8 ounce block cream cheese at room temp
- 1 cup shredded cheese of choice (I used Mexican blend)
- BBQ seasoning blend
- 30 Little Smokies or mini cocktail hot dogs
- 15 slices bacon cut in half
Instructions
- Cut the jalapenos in half lengthwise and scoop/ scrape out the seeds and white ribs.
- Put the cream cheese, shredded cheese, and some BBQ seasoning in a bowl. Stir until combined.Note: I had the best luck pressing the mixture together with the back of a spoon, it does take a few minutes to come together.
- Fill the jalapeno halves with the cream cheese mixture, top each with a little smokie, and wrap each with a half slice of bacon, overlapping slightly.
- Sprinkle more BBQ seasoning over top.
- Set the smoker or pellet grill to 250 degrees. Place the bacon wrapped jalapenos on the grill grate for about 2 hours, check toward the end of cooking and remove once the bacon is cooked how you prefer.
