Blackstone Caribbean Jerk Shrimp Quesadillas

An easy, tasty griddle recipe with tropical vibes is what I am sharing today… Blackstone Caribbean Jerk Shrimp Quesadillas!

Using a Caribbean jerk seasoning blend and store bought sauce makes this a super simple dinner with big flavors.

Plus it cooks up in just a few quick minutes thanks to the large griddle or flat top grill cooking space.

How to make Blackstone Caribbean Jerk Shrimp Quesadillas

First put a pound of jumbo shrimp that have been peeled and deveined into a bowl.

Then add some soy sauce, minced garlic, and a tablespoon of a Caribbean jerk seasoning blend.

Combine until mixed and place the bowl of seasoned shrimp onto a tray.

Then add your other ingredients to easily carry it all out to the griddle.

Preheat the Blackstone to medium for a few minutes.

Then add some cooking oil and the shrimp.

They will cook pretty fast, only about 2 to 3 minutes total.

Use your hibachi spatulas to mix and flip a few times and then remove them.

You can cut them into smaller pieces if preferred, I just left mine whole.

Lower the heat on the griddle to medium low and scrape it if needed from the shrimp cooking.

Add more cooking oil and 4 soft taco size flour tortillas.

Pile on some shredded cheese to each, along with the cooked shrimp, some store bought Caribbean jerk sauce or marinade, fresh cilantro, and then more cheese.

Top each with another flour tortilla.

Flip them carefully and remove from the griddle once the cheese is nice and melty and the tortillas are crisped how you prefer.

For me this was about 2 to 3 minutes per side.

Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • 1 pound jumbo shrimp peeled and deveined
  • 1 tablespoon soy sauce
  • 1 tablespoon Caribbean Jerk seasoning blend
  • 3 to 4 cloves garlic minced
  • cooking oil of choice (I used olive oil)
  • 8 soft taco size tortillas
  • 3 cups shredded cheese of choice
  • 1 cup Caribbean Jerk sauce or marinade in a bottle
  • Optional: fresh cilantro, sour cream, hot sauce

Instructions
 

  • Put the shrimp in a bowl along with the soy sauce, jerk seasoning, and garlic. Mix until combined.
  • Preheat the griddle to medium and add some cooking oil and the seasoned shrimp. Cook 2 to 3 minutes, remove the shrimp, and lower the griddle heat to medium low.
    Note: You can cut the shrimp into smaller pieces if preferred.
  • Scrape the griddle, add more cooking oil, and 4 of the tortillas. To each tortilla add some cheese, shrimp, jerk sauce, cilantro (if using), more cheese, and top with the remaining tortillas.
  • Cook 2 to 3 minutes per side, remove once the cheese is melted and the tortillas are cooked how your prefer. Serve with sour cream and hot sauce if desired.
