Blackstone Teriyaki Steak and Zucchini

Blackstone Teriyaki Steak and Zucchini

Some days I make dinner from scratch and it’s a long, but enjoyable, process… and then there are those simple nights where it’s an easy griddle recipe for Blackstone Teriyaki Steak and Zucchini.

Using a store bought marinade with no high fructose corn syrup, like this Kikkoman brand, is key for when you want simplicity.

But hey, if you have a recipe for homemade teriyaki go ahead and use that 🙂

We had a monstrous garden fresh zucchini and some steaks from our local butcher.

How to make Blackstone Teriyaki Steak and Zucchini

First, marinate two sirloin steaks (or any steak of choice) in the teriyaki sauce, again… the kind with no high fructose corn syrup is HIGHLY recommended for easy griddle clean up.

Mine marinated in the fridge for a few hours.

Then dice the zucchini into about inch size pieces, I only used about half of my zucchini.

And season the steaks with kosher salt and pepper on both sides.

Preheat your Blackstone griddle or flat top grill to medium heat for a few minutes.

Drizzle some cooking oil of choice, the zucchini, kosher salt, and pepper.

Cook the zucchini for about 3 minutes, mixing together with hibachi spatulas a few times.

Then more cooking oil on an empty side of the griddle and add the steaks.

I tried to encourage my husband to join my griddle party 😉

Add some of the teriyaki sauce to the zucchini right after the steaks.

The steaks will cook 3 to 4 minutes per side for medium rare to medium.

Continue cooking and mixing the zucchini during this time as well.

And that face you make when flipping the steaks and see that gooooooorgeous char on them!!
