Blackstone Cherry Pepper Chicken Sandwiches
These Blackstone Cherry Pepper Chicken Sandwiches with an easy homemade cherry pepper sauce are an easy, extra tasty, and unique dinner on the griddle.
I had this High Protein Cherry Pepper Aioli already made, but also included directions in the recipe card for a smaller batch for these sandwiches.
An optional step is marinating the chicken in some of the cherry pepper brine for an hour, or even overnight.

How to make Blackstone Cherry Pepper Chicken Sandwiches
Preheat your Blackstone or flat top griddle to medium heat.
Season the chicken on both sides with kosher salt, pepper, and a seasoning blend of choice.
I went with my Blackstone All Purpose seasoning.

Cook the chicken for 9 to 12 minutes, flipping a few times.
These are 4 chicken breasts, but chicken thighs work too.

Add either a slice of cheese, or some shredded cheese over each piece of chicken during the last minute.
Also toast the buns on the griddle.

Assemble the sandwiches with the cheesy chicken on each bottom bun and plenty of that cherry pepper sauce.

Add additional toppings of choice to your Blackstone Cherry Pepper Sandwiches and enjoy!
I went with a few sliced cherry peppers and lettuce.

Blackstone Cherry Pepper Chicken Sandwiches
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2/3 cup mayo (or blended cottage cheese for a healthier option)
- 3 to 4 cherry peppers (plus 2 to 3 teaspoons of the brine)
- 2 teaspoons lemon juice
- 2 to 3 cloves garlic
- kosher salt, pepper
- 4 boneless, skinless chicken thighs or chicken breasts
- seasoning blend of choice (I used Blackstone All Purpose seasoning)
- cooking oil of choice
- 4 slices cheese of choice (or some shredded cheese)
- 4 burger buns
- Toppings of choice: sliced cherry peppers, shredded lettuce, onion, tomato
Instructions
- Put the mayo or blended cottage cheese, cherry peppers plus brine, lemon juice, garlic, kosher salt, and pepper in a food processor or blender. Blend 1 minute.Note: Option to marinate the chicken with some of the cherry pepper brine from the jar for an hour, or even overnight.
- Season the chicken with kosher salt, pepper, and seasoning blend of choice.
- Preheat the griddle to medium heat. Add cooking oil and the chicken. Cook 9 to 12 minutes, flipping a few times. Add cheese to chicken and place the buns cut side down on the griddle for a minute to toast them.
- Assemble the sandwiches with chicken on the bun, cherry pepper aioli/sauce, and toppings such as sliced cherry peppers, shredded lettuce, cheese, onion, tomato.Note: You mave some aioli leftover, store covered in the fridge for up to a week to use on more sandwiches or as a veggie or chip dip.
