Smoked Veggie Goat Cheese Sliders
Smoked veggie goat cheese sliders, a yummy vegetarian or Meatless Monday recipe for the smoker or pellet grill!
We are not vegetarians but truly enjoyed these veggie sliders.
These could be served as dinner, an appetizer, or even a fancier game day snack.
How to Make Smoked Veggie Goat Cheese Sliders
First set out your veggies of choice.
I went with a red and yellow bell pepper, an eggplant, an onion, and some cherry tomatoes and sliced garlic.
Mushrooms would be a great addition!
Cut the peppers, onion, and eggplant into bite size pieces.
Then place the veggies on a baking sheet and add the tomatoes and sliced garlic.
Toss the veggies with olive oil, balsamic vinegar, kosher salt, pepper, crushed pepper flakes, and Italian seasoning.
Then place on the smoker or pellet grill set to 250 degrees.
The veggies will do their thing on the smoker for about an hour and a half to two hours, and shrink a lot in size.
Toss them a few times and keep checking toward the end of cook time.
Just remove them when they are done how you like.
Once the veggies are done, remove them and let them cool slightly.
For the sliders I am using a pack of King’s Hawaiian sweet rolls.
I used a large bread knife to cut them, separating the bottom half of the buns and the top half.
First arrange 6 slices of provolone cheese on the bottom half of the buns, overlapping the cheese slightly.
Then arrange the cooked veggies over the cheese.
And a drizzle of balsamic glaze, which can be found in a squeeze bottle in the vinegar section of most grocery stores.
Next 4 ounces of crumbled goat cheese and sliced fresh basil over top.
I assembled my sliders on a baking sheet.
That way all I had to do was add the top half of the buns and place back on the smoker for another 20 to 30 minutes.
The smoker should still be set to 250 degrees, we really just need to warm these through and melt the cheese.
Once the cheese is melted you can serve these gorgeous Smoked Veggie Goat Cheese Sliders!
Use a sharp knife to cut them into individual sliders.

Smoked Veggie Goat Cheese Sliders
Equipment

- Traeger/Pellet Grill
Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 1 small eggplant
- 5 to 6 cloves garlic
- 8 ounces cherry or grape tomatoes
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- kosher salt, pepper, crushed red pepper flakes, Italian seasoning
- 1 12 pack slider buns (I used King's Hawaiian Sweet Rolls cut in half to separate tops and bottoms)
- 6 slices provolone cheese
- balsamic glaze (squeeze bottle found in vinegar section of grocery store)
- 4 ounces crumbled goat cheese
- fresh basil leaves sliced
Instructions
- Cut the bell peppers, onion, and eggplant into bite size pieces and thinly slice the garlic. Place the cut veggies and the tomatoes on a baking sheet.
- Drizzle the olive oil and balsamic vinegar over top, season with kosher salt, pepper, crushed red pepper flakes, and Italian seasoning. Toss until evenly coated.
- Set the pellet grill or smoker to 250 degrees. Place the baking sheet on the grate for 1 1/2 to 2 hours. Toss a few times throughout.
- Remove the veggies and let cool slightly.
- Place the slices of cheese on the bottom half of the slider buns, overlapping slightly. Arrange the smoked veggies in a single layer over the cheese, drizzle some balsamic glaze over the veggies, top with goat cheese crumbles. Sprinkle the fresh basil and top with the top half of the slider buns.
- Put the sliders on a baking sheet and place back on the smoker (still set to 250 degrees) for 20 to 30 minutes or until the cheese is melted.
