Blackstone Cajun Fried Rice
This is my newest recipe creation on the griddle, and this one has a slightly spicy kick! Blackstone Cajun Fried Rice combines jambalaya vibes with hibachi style fried rice.
Cooking on the griddle or flat top grill is always fun, especially when putting new twists and spins on traditional favorites.
You could easily make this recipe your own by adding your favorite jambalaya ingredients such as shrimp and peppers, this is just my very simple version.
How to make Blackstone Cajun Fried Rice
First prepare your ingredients and place them on a tray to easily carry out to your Blackstone griddle.
I have diced chicken and andouille sausage along with onion, garlic, and corn kernels.
Plus my Jasmine rice that I cooked and cooled earlier, soy sauce, butter, eggs, and Cajun seasoning.
Preheat your griddle to medium high heat for a few minutes.
Then add some cooking oil of choice, I always use olive oil.
To one side of the griddle place your rice and crack 3 eggs over top.
And to the other side of the griddle add the onion, corn, chicken, and some Cajun seasoning.
Cook both the rice and chicken/ veggies for 4 to 5 minutes, keeping them separate.
Then combine everything together with hibachi spatulas.
And add more Cajun seasoning, the andouille sausage, butter, garlic, and soy sauce.
Cook this for 6 to 8 more minutes, pressing the rice down if you want a crispier rice texture.
Blackstone Cajun Fried Rice is great served with Tabasco sauce and yum yum sauce!
Usually we break out the sriracha, but thought the Tabasco would add to the Cajun theme.
And we kept it simple with a store bought yum yum sauce, which for us is a must!
We even had dinner right on the patio on this night, so fun!

Blackstone Cajun Fried Rice
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 6 cups cooked and cooled rice (I used Jasmine rice)
- 3 eggs
- 2 to 3 ears corn on the cob kernels cut off the cob
- 1 onion diced
- 1 pound chicken breasts or thighs cut into bite size pieces
- 1 1/2 tablespoons Cajun seasoning blend
- 1 pound smoked andouille sausage diced
- 6 to 7 cloves garlic
- 1/2 cup soy sauce
- 4 tablespoons butter
- Optional: Tabasco sauce, yum yum sauce
Instructions
- Prepare all of the ingredients, put them on a tray, and head out to the griddle. Preheat the griddle to medium high for a few minutes.
- Add some cooking oil of choice. Put the cooked rice on one side of the griddle and crack the eggs over the rice. Put the corn, onion, chicken, and half of the Cajun seasoning on the other side of the griddle.
- Mix the rice and eggs together, and mix the corn, onion, and chicken together… but keep the rice and the veggies/chicken separate on the griddle. Cook both 4 to 5 minutes, then mix them all together with hibachi spatulas.
- Add the remaining Cajun seasoning, sausage, garlic, soy sauce, and butter. Mix everything together on the griddle and cook 6 to 8 minutes. Spread the rice flat and press down a few times for a crispier rice texture.
- Serve with Tabasco sauce and/or yum yum sauce if desired.

This was an absolute winner for the entire family!! I used coconut aminos for the soy sauce as the only substitution and it was a delicious meal. I normally don’t use our Cajun seasoning but this made me want to use it more often! Thank you!
