Smoked Bacon Wrapped Chicken Bombs
Smoked Bacon Wrapped Chicken Bombs are an EXPLOSION of flavor!!!
This recipe is NOT your typical chicken dinner, my friends.
As spectacular as these truly are, they have only a few simple ingredients and really not difficult to make.
I am using goat cheese, but cream cheese is a perfectly acceptable substitute.
How to make Smoked Bacon Wrapped Chicken Bombs
First, season 6 boneless, skinless chicken thighs with BBQ seasoning, kosher salt, and pepper on both sides.
Using the thighs is a must for juicy chicken!
And they are juuuust the right size for rolling them into an adorable bacon wrapped package.
Then place some goat cheese or cream cheese in the center of each.
I tried to get as much cheese as possible, but not too much that the cheese would melt out of the chicken as they cook.
Then roll the chicken around the cheese and wrap two slices of bacon around each, overlapping slightly.
No worries here if they don’t look perfect… perfection is overrated 😉
And season all sides of the bacon with more BBQ seasoning.
Place them on the grill grate of your Traeger pellet grill or smoker that has been set to 250 degrees.
They will cook for 2 to 2 1/2 hours total, and no need to flip at all 🙂
I just kept checking on mine during the last half hour on the smoker.
Remove the Smoked Bacon Wrapped Chicken Bombs once the bacon is cooked how you like 🙂
And, of course, making sure the chicken is above 165 degrees.
You can serve these with BBQ sauce, or they are fabulous and flavorful just like this!

Smoked Bacon Wrapped Chicken Bombs
Equipment
- Traeger/Pellet Grill
- Smoker
Ingredients
- 6 boneless, skinless chicken thighs (medium to large in size)
- BBQ seasoning, kosher salt, pepper
- 3 to 4 ounces goat cheese or cream cheese
- 12 slices regular cut bacon
- Optional: BBQ sauce
Instructions
- Season both sides of the chicken thighs with BBQ seasoning, kosher salt, and pepper.
- Place some cheese in the center of each and roll the chicken around the cheese. Wrap each with two slices of bacon, overlapping slightly.
- Sprinkle more BBQ seasoning on all sides of the bacon.
- Set the smoker or pellet grill to 250 degrees. Put the bacon wrapped chicken on the grill grate for 2 to 2 1/2 hours or until the bacon is cooked how you prefer and the chicken has an internal temperature above 165 degrees.
- Serve with BBQ sauce if desired.
