Blackstone Steak and Smashed Potatoes
A recipe for a complete meal on the griddle that’s pretty fabulous… Blackstone Steak and Smashed Potatoes!
Steak and potatoes are a classic combo.
And this one is all cooked on the Blackstone griddle or flat top grill in just a few minutes.
The garlic lemon herb butter is the secret flavor weapon in this dish!
How to make Blackstone Steak and Smashed Potatoes
I went with ribeye steaks that were about an inch thick.
The recipe calls for 4 steaks, but these steaks were SO huge I only made 3 and we divided them up at dinner.
Also some petite gold potatoes, but you could also use petite redskin potatoes.
This lemon garlic herb butter was so easy to make and went perfectly with both the steak and potatoes!
Mix together 5 tablespoons of melted butter with lemon juice, chopped fresh herbs, fresh minced garlic, and crushed red pepper flakes to add a little spice.
For the herbs I used a mix of rosemary, thyme, dill, and basil.
But mix it up and use any fresh herbs you like 🙂
I boiled the petite potatoes in salted water for 12 minutes.
And seasoned the beautiful ribeye steaks with plenty of kosher salt and pepper.
Preheat the griddle to medium heat for several minutes.
Then add some cooking oil of choice.
First place the potatoes on the griddle, spaced out slightly.
And smash them with a burger press then season with kosher salt and pepper.
Then the ribeye steaks go on the oiled griddle.
Both the potatoes and steaks will cook 6 to 8 minutes total, flipping halfway through.
I flipped my steaks after 3 minutes, and cooked exactly 3 minutes on the other side for a perfect medium rare.
For medium I would recommend 4 minutes per side, but this will also depend on steak thickness.
Use a thermometer to monitor the internal temperature for exact doneness.
During the last minute or two on the griddle, brush the lemon garlic butter on both the steaks and the taters.

We could barely stand to wait for the steaks to rest before digging in.

Blackstone Steak and Smashed Potatoes
Equipment
- Flat Top Grill/ Griddle
- Blackstone Griddle
Ingredients
- 1 1/2 pounds petite redskin or gold potatoes
- kosher salt, pepper, crushed red pepper flakes (optional)
- 5 tablespoons melted butter
- 3 tablespoons chopped fresh herbs of choice (I used thyme, rosemary, and dill)
- 2 tablespoons lemon juice
- 5 to 6 cloves garlic finely minced
- 4 steaks of choice (I used ribeye steaks 1 inch thick)
- cooking oil of choice
Instructions
- Fill a saucepan with water, bring to a boil, salt the water with kosher salt and add the potatoes. Boil for 12 minutes (if they are regular size potatoes and not petite, boil for 18 minutes).
- Combine the melted butter, fresh herbs, lemon juice, garlic, and some crushed red pepper flakes (if using) in a small bowl.
- Season the steaks with kosher salt and pepper.
- Preheat the griddle to medium heat for several minutes. Spread some cooking oil of choice on the griddle and put the potatoes on the griddle once hot and smash them with a burger press or cup. Season the potatoes with kosher salt and pepper.
- Add the steaks to the griddle and cook both the steaks and potatoes for 6 to 8 minutes total, flipping both halfway through. Brush the lemon herb garlic butter on the potatoes and steak during the last minute or two.Note: I cooked my steaks 6 minutes total (3 minutes per side) for medium rare doneness, cook more or less depending on how you like your steaks cooked. I recommend using a thermometer to monitor steak temperature.
