
Blackstone Cowboy Chicken Stir Fry
Blackstone Cowboy Chicken Stir Fry is a quick and easy griddle recipe, and can be served in a few different ways.
It’s perfect for camping because most of the ingredients are pantry staples, but also with a few fresh ingredients.
You can enjoy this Tex-Mex dish as is, or get creative with fun toppings like sour cream, cheese, hot sauce, and crushed up tortilla chips.
It’s also a great taco filling or topping for nachos.

How to make Blackstone Cowboy Chicken Stir Fry
First prepare your ingredients and put them on a tray to easily carry to the griddle or flat top grill.
I have 1 1/2 pounds diced chicken thighs, or you can use chicken breasts.
A diced onion and garlic are part of the fresh ingredients.
Then some canned corn, black beans, Rotel tomatoes, and diced jalapenos.

First preheat the griddle to medium heat for a few minutes.
Once hot, add some cooking oil, the onion, chicken, kosher salt, pepper, and your favorite taco or fajita seasoning.
And cook 5 to 6 minutes, mixing together with hibachi spatulas.

Then add the minced garlic and canned ingredients along with a little more kosher salt, pepper, and taco or fajita seasoning.
You can choose to add some or all of the jalapeno can based on your spice preference.
Cook another few minutes, mixing it all together.

Set out some fun toppings like cheese, sour cream, hot sauce, and tortilla chips.
Fresh cilantro would also be a great topping 🙂

Blackstone Cowboy Chicken Stir Fry might be super easy, but it’s sooo flavorful with a slight spice 🙂

Just use your hibachi spatulas to transfer it all to a tray.
I used the same tray I used to carry everything out.

Then everyone can make their own, adding any toppings they wish.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice (I used olive oil)
- 1 1/2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
- 1 onion diced
- kosher salt, pepper, taco or fajita seasoning blend
- 5 to 6 cloves garlic minced
- 1 14 ounce can corn drained
- 1 14 ounce can black beans drained and rinsed
- 1 10 ounce can Rotel tomatoes
- 1 4 ounce can diced jalapenos
- Optional toppings: shredded cheese, sour cream, hot sauce, cilantro, crushed up tortilla chips
Instructions
- Preheat the griddle to medium for a few minutes. Add some cooking oil, the chicken, onions, kosher salt, pepper, and taco or fajita seasoning blend. Cook 5 to 6 minutes, mixing together with hibachi spatulas.
- Add the garlic, corn, black beans, Rotel, some or all of the jalapenos (depending on spice preference), more kosher salt, pepper, and taco or fajita seasoning. Cook 3 to 4 minutes, mixing together with hibachi spatulas.
- I used my hibachi spatulas to transfer everything to a tray. Serve with optional toppings such as shredded cheese, sour cream, hot sauce, cilantro, crushed up tortilla chips.
