Blackstone Red Pepper Shrimp Tortellini

Blackstone Red Pepper Shrimp Tortellini

If you are a griddle owner, I am sure you’ve heard of just how amazing tortellini is to make… well this recipe for Blackstone Red Pepper Shrimp Tortellini is a version you’ll want to make again and again 🙂

I created this recipe because my daughter LOVES roasted red peppers, and she’s a pasta girl at heart (really any carbs 😉 ).

An easy to make red pepper cream sauce is truly the star of this griddle tortellini dish 🙂

ingredients for the pasta dish

How to make Blackstone Red Pepper Shrimp Tortellini

First we will make the sauce in a food processor or blender.

Add a 12 ounce jar of roasted red peppers, just drain the excess liquid first.

Then add in a few garlic cloves, a tablespoon of Italian seasoning, and plenty of kosher salt, pepper, and crushed red pepper flakes.

Next in goes a cup of heavy cream.

Just blend until smooth and voila… you have an amazing pasta sauce!

Prepare the rest of your ingredients and you can head out to your Blackstone griddle or flat top grill.

We have a bag of frozen cheese tortellini that has been thawed, a diced onion, chopped spinach, parmesan cheese, and a pound of shrimp.

prepped ingredients on a tray ready for the griddle

Preheat your griddle to medium heat for a few minutes, add some cooking oil of choice and the tortellini.

Add some water and cover with a melting dome for 2 to 3 minutes total.

Flip them halfway though and pour a little more water before covering again.

The sauce will seem like a lot at first, but it will thicken after a minute or two on the griddle.

Ingredients

  • 1 12 ounce jar roasted red peppers drained of liquid
  • 1 cup heavy cream
  • 4 to 6 cloves garlic
  • 1 tablespoon Italian seasoning
  • kosher salt, pepper, crushed red pepper flakes
  • cooking oil of choice
  • 1 20 ounce bag frozen cheese tortellini thawed
  • 1 onion diced
  • 5 ounces spinach chopped
  • 1 pound jumbo shrimp peeled and deveined
  • 1/2 cup shredded parmesan cheese

Instructions

  • Put the red peppers, heavy cream, garlic, Italian seasoning, kosher salt, pepper, and crushed red pepper flakes in a food processor or blender. Blend until smooth.
  • Prepare the rest of the ingredients. Preheat the griddle to medium heat for a few minutes. Add some cooking oil, the thawed tortellini, cover with a 9×13 foil pan or melting dome and squirt a little water on the griddle under the dome.

  • Add the spinach and shrimp plus season with kosher salt, pepper, and crushed red pepper flakes, and more cooking oil if needed. Cook 2 to 3 more minutes. Then pour the red pepper sauce over top, mix it all together for 1 to 2 more minutes. Serve with parmesan cheese sprinkled over top.
Note: The sauce will thicken on the griddle as it cooks.
