Blackstone Red Pepper Shrimp Tortellini
If you are a griddle owner, I am sure you’ve heard of just how amazing tortellini is to make… well this recipe for Blackstone Red Pepper Shrimp Tortellini is a version you’ll want to make again and again 🙂
I created this recipe because my daughter LOVES roasted red peppers, and she’s a pasta girl at heart (really any carbs 😉 ).
An easy to make red pepper cream sauce is truly the star of this griddle tortellini dish 🙂
How to make Blackstone Red Pepper Shrimp Tortellini
First we will make the sauce in a food processor or blender.
Add a 12 ounce jar of roasted red peppers, just drain the excess liquid first.
Then add in a few garlic cloves, a tablespoon of Italian seasoning, and plenty of kosher salt, pepper, and crushed red pepper flakes.
Next in goes a cup of heavy cream.
Just blend until smooth and voila… you have an amazing pasta sauce!
Prepare the rest of your ingredients and you can head out to your Blackstone griddle or flat top grill.
We have a bag of frozen cheese tortellini that has been thawed, a diced onion, chopped spinach, parmesan cheese, and a pound of shrimp.
Preheat your griddle to medium heat for a few minutes, add some cooking oil of choice and the tortellini.
Add some water and cover with a melting dome for 2 to 3 minutes total.
Flip them halfway though and pour a little more water before covering again.
Then drizzle a little more cooking oil and the diced onion.
Cook together, mixing with hibachi spatulas, for about 2 to 3 minutes.
Then add the shrimp, spinach, plus kosher salt, pepper, and crushed red pepper flakes.
And more cooking oil if needed.
This will cook together for another 2 to 3 minutes.
Finally pour the red pepper cream sauce over top and mix it all together with hibachi spatulas.
The sauce will seem like a lot at first, but it will thicken after a minute or two on the griddle.
Top your Blackstone Red Pepper Shrimp Tortellini with parmesan cheese and serve 🙂
We had this dinner with a Caesar salad and everyone absolutely LOVED it!
