Blackstone Teriyaki Shrimp and Veggies
This healthy dinner recipe for the griddle was inspired by a traditional hibachi style meal… Blackstone Teriyaki Shrimp and Veggies!
It’s a lower carb version of my favorite shrimp, mushrooms, zucchini, and onions made at home on my flat top grill.
Not too many ingredients, and it comes together in about 10 minutes!
I even dipped it in store bought yum yum sauce for the total package 🙂
How to make Blackstone Teriyaki Shrimp and Veggies
First put a pound of shrimp (peeled and deveined) in a bowl and add 1/3 cup teriyaki sauce, 2 tablespoons soy sauce, and some minced garlic and grated ginger.
I used the teriyaki sauce with no high fructose corn syrup.
Toss it together until combined.
Then slice a zucchini, some mushrooms, and an onion.
First preheat your Blackstone griddle to medium heat for a few minutes.
And add some olive oil (or cooking oil of choice), the sliced onion, mushrooms, kosher salt, pepper, and crushed red pepper flakes.
Cook the veggies for about 4 to 5 minutes, mixing together with hibachi spatulas.
Then add the sliced zucchini.
As well as the shrimp with all of the marinade.
And cook for another 4 to 5 minutes, mixing together a few times.
Serve your Blackstone Teriyaki Shrimp and Veggies with yum yum sauce for dipping 🙂
You could also add some sriracha for a spicier version!

Ingredients
- 1 pound jumbo shrimp peeled and deveined
- 1/3 cup teriyaki sauce (I used Kikkoman with no high fructose corn syrup)
- 2 tablespoons soy sauce
- 5 to 6 cloves garlic minced
- 1 tablespoon grated ginger or ginger paste (optional)
- cooking oil of choice
- 8 ounces sliced mushrooms
- 1 onion sliced
- kosher salt, pepper, crushed red pepper flakes
- 1 zucchini sliced
- Optional: yum yum sauce, sriracha
Instructions
- Put the shrimp in a bowl and pat them dry well with paper towels. Add the teriyaki sauce, soy sauce, garlic, and ginger (if using). Toss until combined.
- Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice along with the mushrooms, onions, kosher salt, pepper, and crushed red pepper flakes.
- Cook the veggies 4 to 5 minutes, mixing together with hibachi spatulas.
- Add the shrimp with the marinade and zucchini, cook 4 to 5 more minutes mixing together with hibachi spatulas. Serve with yum yum sauce and/or sriracha if desired.
