Blackstone Greek Chicken and Peppers
Oh my have I got a goooooood one for you today, friends… Blackstone Greek Chicken and Peppers is a healthy, feel good recipe for the griddle or flat top grill 🙂
Sometimes the BEST things in life are the simplest, and this dinner is just that.
It even has an easy homemade Greek yogurt sauce that also doubles as the marinade for the chicken.
It’s low carb/ Keto friendly if that’s your thing… and if not, it’s just plain delicious and I think that’s everybody’s thing 😉
How to make Blackstone Greek Chicken and Peppers
First we will make the sauce and marinade in a bowl.
Mix together 2 containers of plain Greek yogurt, a little mayo and lemon juice, some dried oregano, plus kosher salt, pepper, and crushed red pepper flakes.
Then cut 1 1/2 pounds of either chicken thighs or breasts and put them into a gallon size plastic bag.
Of course a bowl works too, but I love the easy cleanup that comes with marinating in a baggie.
Add a few spoonfuls of the yogurt sauce, mix it all together, and marinate in the fridge for a bit.
Then put all of your ingredients on a tray to head out to the griddle or flat top grill.
I sliced a red onion and red bell pepper, and the feta and basil are optional toppings.
Preheat your Blackstone or flat top grill to medium heat for a few minutes.
Then a little cooking oil of choice goes down with the chicken and veggies, and a bit more kosher salt, pepper, and crushed red pepper flakes.
Cook it all together for 8 to 10 minutes, mixing it with hibachi spatulas a few times.
Serve Blackstone Greek Chicken and Peppers with the remaining Greek yogurt sauce for dipping 🙂
And with a little feta and basil over top as well.
Healthy eating doesn’t get much better than this!
This was our dinner and it vanished almost immediately, but this would also be an awesome meal prep recipe.

Blackstone Greek Chicken and Peppers
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 2 5.3 ounce containers plain Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon dried oregano
- 4 to 5 cloves garlic finely minced
- kosher salt, pepper, crushed red pepper flakes
- 1 1/2 pounds boneless, skinless chicken thighs or chicken breasts cut into bite size pieces
- cooking oil of choice
- 1 red onion sliced
- 1 red bell pepper sliced
- Optional: basil, feta cheese
Instructions
- Put the Greek yogurt, mayonnaise, lemon juice, oregano, garlic, kosher salt, pepper, and crushed red pepper flakes in a bowl. Stir until mixed.
- Put the chicken pieces in a bowl or gallon size plastic bag along with a few spoonfuls of the yogurt sauce. Massage the bag or mix together until combined and marinate in the fridge for a few hours or overnight. Store the remaining sauce, covered, in the fridge.
- Preheat your griddle to medium for a few minutes. Add some cooking oil of choice along with the seasoned chicken, onions, peppers, kosher salt, pepper, and crushed red pepper flakes.
- Cook 8 to 10 minutes, mixing together with your hibachi spatulas a few times. Top with basil and/or feta cheese if desired. Serve with the remaining yogurt sauce for dipping.
