Blackstone Smashed Greek Tacos

Today I recreated Blackstone Betty’s recipe for Blackstone Smashed Greek Tacos!

She is the absolute QUEEN of Blackstone griddle cooking!

I changed her recipe slightly to make it more of an easy weeknight meal, but you can watch her full video on YouTube.

How to make Blackstone Smashed Greek Tacos

First, we will season a pound of ground lamb, chicken, or turkey.

A teaspoon each of paprika and oregano, a little dried dill, kosher salt, and pepper.

Then about 2 ounces of crumbled feta cheese and some finely minced or grated garlic.

Give that a mix and then roll them into 8 balls.

I find this easiest to do with my hands or you could use an ice cream scoop.

For the feta cucumber relish start by slicing 3 mini cucumbers.

Then add some pickled red onions, a little brine from the onions, more feta, olive oil, kosher salt, and pepper.

Then preheat the Blackstone griddle to medium.

Add some cooking oil of choice and the ground, seasoned meat.

Be sure to space them apart slightly.

And top each with a soft taco sized flour tortilla.

Then use a burger press to smash them flat, slightly twisting the press.

Give them a flip after 4 minutes using a spatula.

And top with some store-bought tzatziki and the gorgeous feta cucumber relish.

Ingredients
  

  • 1 pound ground lamb or ground chicken
  • 6 ounces feta cheese
  • 3 cloves garlic grated or finely minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon dried dill
  • kosher salt, pepper
  • 3 mini cucumbers sliced
  • 1/3 cup pickled red onions (plus 1 tablespoon of the brine)
  • 1 tablespoon olive oil
  • cooking oil of choice
  • 8 soft taco size flour tortillas
  • 3/4 cup tzatziki sauce

Instructions
 

  • Put the lamb or chicken, 2 ounces of the feta, garlic, oregano, paprika, dill, kosher salt, and pepper in a bowl. Combine and roll into 8 balls, I find it easiest to use my hands for this.
  • In another bowl add the remaining feta, cucumber, pickled red onions plus 1 tablespoon of the brine, olive oil, and just a little kosher salt, and pepper. Toss until combined and set aside.
  • Preheat griddle to medium. Add cooking oil of choice and place balls of lamb or chicken, spaced a few inches apart. Put a flour tortilla over each ball and use a burger press to smash as flat as possible, with a slight twist.
  • Cook 4 minutes and flip. Cook 2 more minutes.
  • Spoon tzatziki sauce down the center of each, top with the cucumber feta relish, fold, and enjoy!
