Blackstone Surf and Turf Loaded Potatoes

My husband and I love a nice steak and lobster night to treat ourselves once in a while, and this griddle creation of Blackstone Surf and Turf Loaded Potatoes was quite the splurge meal!

We even topped these baked potatoes with a homemade Cajun cream sauce made right on the flat top!

Shrimp works in place of the lobster if preferred, but I got a darn good deal at Costo on these lobster tails, so we really went all out.

How to make Blackstone Surf and Turf Loaded Potatoes

First bake 4 Russet potatoes in a 400 degree oven for 45 minutes to an hour.

I like to coat mine with olive oil and plenty of kosher salt.

Then cut the steak and lobster (or shrimp) into bite size pieces.

And place on a tray along with some heavy cream, Dijon mustard, garlic, lemon, and a Cajun seasoning blend.

You’ll also need a cast iron skillet to make the luscious cream sauce.

Preheat your Blackstone to medium high/ high.

Set a cast iron skillet on the griddle and add 2 tablespoons butter.

Once melted add 2 cups heavy cream, 2 tablespoons Dijon mustard, kosher salt, pepper, and Cajun seasoning to taste.

Whisk this until it’s bubbling, but don’t walk away because if it gets too hot it will bubble over.

If it looks like it’s bubbling too much, just remove it for a moment from the heat.

Once it starts bubbling, reduce the heat to medium and whisk this for about 5 minutes.

Then scoot the sauce to the edge of the griddle.

Add some cooking oil of choice and the steak.

Season with kosher salt, pepper, and Cajun seasoning.

Cook the steak for 2 to 3 minutes, mixing with spatulas a few times.

Then add the lobster, garlic, and lemon juice.

Cook this for 2 to 3 more minutes.

And you can start to prepare the baked potatoes by slicing them open and mashing them flat with your griddle scraper.

Once the steak and lobster are done, we get to top these taters!

I like to open and smash them as much as possible to get allllll the deliciousness on every bit of the potatoes.

  • Blackstone Griddle
  • Flat Top Grill/ Griddle
  • Cast-iron skillet

Ingredients
  

  • 2 tablespoons butter
  • 2 cups heavy cream
  • 2 tablespoons Dijon mustard
  • kosher salt, pepper, Cajun seasoning blend
  • cooking oil of choice
  • 1 pound sirloin steak cut into bite size pieces
  • 1 pound lobster tails (or shrimp) shells removed, cut into bite size pieces
  • 6 cloves garlic minced
  • 2 tablespoons lemon juice
  • chives or fresh herb of choice for garnish
  • 4 baked potatoes *See recipe note section for directions

Instructions
 

  • Preheat griddle to medium high/high. Place a 10-to-12-inch cast iron skillet in the center. Add butter and once melted add heavy cream, Dijon mustard, kosher salt, pepper, and Cajun seasoning to taste. Whisk a few times and do not walk away.
    Note: Keep oven mitts or towels handy for handling the skillet.
  • Once it's almost bubbling, lower griddle heat to medium. If the cream starts bubbling too much, remove from heat or scoot pan to edge of griddle.
  • Whisk cream sauce while gently bubbling for 5 minutes, then move skillet to edge of griddle in a cooler spot. Add cooking oil to center of Blackstone and add steak, kosher salt, pepper, and Cajun seasoning. Cook 2 to 3 minutes, mixing with spatulas.
  • Add lobster, garlic, and lemon juice to steak. Cook 2 to 3 more minutes, mixing together.
  • Put each potato on a plate. Cut down the center, open potatoes, and use a fork or your griddle scraper to mash and flatten them.
  • Top each potato with some of the steak and lobster and spoon Cajun cream sauce over top. Garnish with chives or fresh herbs of choice.

Notes

Baked Potatoes: Rub 4 Russet potatoes with olive oil and season with plenty of kosher salt. Place on a lined baking sheet. Bake in a 400-degree oven for 45 minutes to 1 hour, depending on potato size.
