Blackstone Sausage Stuffed Zucchini
If you’re looking for a yummy low carb or Keto friendly dinner on the griddle… I’ve got ya covered with this Blackstone Sausage Stuffed Zucchini recipe!
Think of it like pizza, but with a hollowed out zucchini as the “crust”.
I did make my husband the same version, but on a French baguette because I didn’t think he’d be thrilled with the zucchini version 😉

How to make Blackstone Sausage Stuffed Zucchini
First, hollow out the center from your zucchini, that has been cut in half lengthwise.
I use a regular kitchen spoon for this job.

And cut a slit on the casings of your Italian sausage to easily remove them.
I am actually using Italian chicken sausage.

Preheat your Blackstone or flat top griddle to medium heat.
Add cooking oil to the griddle with the sausage on one side and the zucchini, cut side down, on the other side.

Mix the sausage and break it apart with your spatulas a few times for about 5 minutes while the zucchini is doing it’s thing on the griddle.

Flip the zucchini over and season with kosher salt, pepper, and Italian seasoning.
I added the bread to the griddle for my husband’s version as well.
And spooned some marinara sauce over each.

Then added the sausage, shredded cheese (I used mozzarella and Asiago), plus more kosher salt, pepper, and Italian seasoning.

Cover with a melting dome until the cheese is melted to perfection.

I didn’t miss the bread at all with Blackstone Sausage Stuffed Zucchini, SO flavorful and every bite was deeeeeee-lish!

My husband and I had to “cheers” as we each tried ours…he loved his more traditional pizza with French bread as I enjoyed my low carb version!

Blackstone Sausage Stuffed Zucchini
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 4 small to medium size zucchini
- cooking oil of choice
- 1 pound Italian sausage (I used Italian chicken sausage) remove casings if needed
- kosher salt, pepper, Italian seasoning
- 1 to 1 1/2 cups marinara sauce
- 1 1/2 to 2 cups shredded cheese of choice
Instructions
- Slice the zucchini in half lengthwise and use a kitchen spoon to scoop out some of the center of each zucchini to hollow it out a little, picture example in post above.
- Preheat griddle to medium. Add cooking oil of choice. Put sausage on one side of griddle, and the zucchini, cut side down, on other side of griddle. Cook 5 to 6 minutes, mixing the sausage a few times with spatulas and breaking it apart.
- Turn zucchini over, season zucchini with kosher salt, pepper, and Italian seasoning. Transfer sausage to the zucchini, spoon some marinara sauce over top, sprinkle cheese over top, and season with more kosher salt, pepper, and Italian seasoning.
- Cover with a melting dome or lid until cheese is melted.
