Blackstone High Protein Chicken Waffle Quesadillas
Blackstone High Protein Chicken Waffle Quesadillas aren’t just for breakfast, this fun griddle recipe can be enjoyed any time!
Meeting your protein goals doesn’t have to be difficult or boring, and this griddle meal is proof.

How to make Blackstone High Protein Chicken Waffle Quesadillas
First preheat your Blackstone or flat top griddle to medium low heat.
Then add some diced, cooked chicken maple breakfast sausage and toss that around until the edges are crisp.
Then add butter and pour some beaten eggs over top, I mixed mine with milk, kosher salt, pepper, and the Blackstone breakfast seasoning blend.

Once the sausage and eggs are cooked and scrambled, move them to the edge of the griddle.
And place 5 frozen protein waffles that have been thawed on the griddle with a little more butter.
Then add cheese of choice to each.

And the egg and chicken sausage.

A drizzle of maple syrup, your favorite hot sauce, more cheese, and top with another protein waffle.
Cook them for a few minutes, flipping, and remove once golden brown and melty cheesy goodness has occured.

Serve Blackstone High Protein Chicken Waffle Quesadillas with more syrup and hot sauce if desired 🙂

Blackstone High Protein Chicken Waffle Quesadillas
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 10 frozen protein waffles (regular size) thawed
- 4 eggs
- 3 tablespoons milk
- kosher salt, pepper, breakfast seasoning blend (optional)
- 4 cooked chicken breakfast sausage pattties (mine were chicken maple) diced
- 3 tablespoons butter
- 1 1/2 cups shredded cheese of choice
- maple syrup, hot sauce
Instructions
- Crack the eggs in a bowl and add milk, kosher salt, pepper, and breakfast seasoning blend (if using). Beat with a fork.
- Preheat your Blackstone griddle to medium low heat. Add the diced, cooked chicken sausage and cook for 3 to 4 minutes, mixing a few times just to crisp the edges.
- Add 1 tablespoon of the butter to the sausage and pour the eggs over the sausage. Mix and scramble the eggs and sausage until cooked how you like, about 2 minutes, and scoot to edge of griddle. Scrape griddle clean.
- Add remaining butter and once melted place 5 of the waffles, add some cheese, the sausage egg mixture, some maple syrup and hot sauce, more cheese, and then top each with another waffle, pressing down.
- Cook 3 to 4 minutes, flipping the quesadillas halfway through. Remove once waffles are golden brown and cheese is melted. Serve with more syrup and/or hot sauce if desired.
