Blackstone BBQ Chicken Quesadillas with Balsamic Relish

It’s an extra special day when your dad comes to cook with you on the griddle! We made his favorite which is Blackstone BBQ Chicken Quesadillas with Balsamic Relish.

I first saw this recipe on Food Network almost 30 years ago from Bobby Flay, and I created an easy home cook version on the Blackstone griddle!

It’s his favorite thing that I make, so we had to make it together to create even more memories around this dish 🙂

How to make Blackstone BBQ Chicken Quesadillas with Balsamic Relish

First mix together 1 tablespoon balsamic vinegar with 1 cup of pico de gallo, and add more balsamic if desired.

I got store bought pico, or you can make your own.

Then mix together 1/2 cup sour cream, 1/4 cup buttermilk, 1 tablespoon lime juice, and some chili powder in another bowl.

Next preheat your Blackstone or flat top griddle to medium heat, add some cooking oil, and a pound of chicken.

Season the chicken with kosher salt, pepper, and your favorite BBQ seasoning.

And cook for 6 to 7 minutes.

Lower the griddle heat and scrape clean if needed.

Add more cooking oil and 6 soft flour tortillas, we used 7 inch tortillas.

Sprinkle cheese on one side of each tortilla, then add the chicken and BBQ sauce.

More cheese goes over the chicken and then fold the empty side over the filled side.

Cook for a few more minutes, flipping a few times until the cheese is melty and the tortillas are golden brown and toasty.

Top with the sour cream buttermilk sauce and of course the balsamic relish.

Ingredients
  

  • 1 cup pico de gallo (store bought or homemade)
  • 1 tablespoon balsamic vinegar (add more if needed according to your taste)
  • 1/2 cup sour cream
  • 1/4 cup buttermilk
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • BBQ seasoning blend, kosher salt, pepper
  • 6 soft flour tortillas (mine were 7-inch size tortillas)
  • 2 to 3 cups shredded cheese of choice
  • BBQ sauce of choice

Instructions
 

  • Put the pico de gallo and balsamic vinegar in a bowl, stir until combined.
  • Put the sour cream, buttermilk, lime juice, and chili powder in another bowl, stir until combined.
  • Toss the chicken with BBQ seasoning blend, kosher salt, and pepper.
  • Preheat your griddle to medium heat. Add cooking oil of choice and the chicken. Cook 6 to 7 minutes, mixing a few times with spatulas. Scoot the chicken to edge of griddle, lower griddle heat to medium low and scrape griddle clean.
  • Add more cooking oil and lay the tortillas flat on the griddle. Add cheese to one side of each tortilla, the chicken, BBQ sauce, more cheese, and use your spatula to fold the empty side of each tortilla over the filled side.
  • Cook for a few minutes, flipping a few times, until cheese is melted and tortillas are crisped how you like. Serve topped with the sour cream sauce and balsamic relish over top.
