Blackstone Caribbean Jerk Chicken Meal Prep
Blackstone Caribbean Jerk Chicken Meal Prep is a healthy griddle recipe for chicken and sweet peppers, and using it in 4 different meals!
I do these meal prep series every so often and use the large griddle cook space to make a lot of food at once, pack it up in containers, and use it throughout the week in several lunches and dinners.

How to make Blackstone Caribbean Jerk Meal Prep
First put 3 to 4 pounds diced chicken in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning, garlic, olive oil, soy sauce, lime juice, and brown sugar.
I also used this Island Stir Fry seasoning along with my Caribbean Jerk seasoning.
Massage the bag until combined and marinate it in the fridge for at least an hour, I marinated mine overnight.

Preheat your Blackstone or flat top griddle to medium heat.
Add cooking oil of choice and the seasoned chicken.

And cook the chicken by itself for 3 to 4 minutes, mixing with spatulas a few times.

Add more cooking oil to an empty space on the griddle and sliced sweet mini peppers.
Season them with kosher salt, pepper, and Caribbean Jerk seasoning.

Cook both the chicken and peppers for 6 to 8 more minutes, keeping them separate.
Then just pack it all up in containers and store in the fridge until ready to use.

Chicken Pineapple Nachos
Not the healthiest meal, but you can save this one for a weekend splurge.
I put a 12-ounce bag of tortilla chips on a baking sheet and piled on shredded cheese, a jar of queso blanco, the chicken and peppers from this meal prep, cilantro, and diced pineapple.
You can place this sheet pan on the griddle over medium low, cover with a large melting dome or lid, and wait until it melts.
Or place in a 350 degree oven until it melts.

Caribbean Jerk Chicken Salads
This one takes just a few minutes thanks to the chicken peppers already being cooked.
On a bed of lettuce add some chicken, peppers, pineapple that I had leftover from the nachos, and cheese.
You can use any dressing you like, I used a store bought balsamic vinaigrette.

Caribbean Jerk Chicken Tacos
Warm some tortillas and fill them with the chicken and peppers from this meal prep, lettuce or cilantro, pineapple (which I also used in the salad and nachos), and cheese.
For a sauce I used spicy mayo but sour cream or store bought taco sauce of choice works too.

Caribbean Chicken Sweet Potato Bowls
This is kind of like a Caribbean twist on the viral sweet potato cottage cheese taco bowl.
Dice a sweet potato, toss with olive oil, kosher salt, and pepper. Then air fryer at 400 degrees for 15 minutes, or bake on a sheet pan at 400 for 30 minutes.
Then assemble the bowls with the sweet potatoes, chicken from this meal prep, cottage cheese, and hot honey.
I also drizzled some store bought cilantro lime taco sauce.
You can certainly add the sweet peppers from this meal prep, but by the time I made this my peppers were gone.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 3 to 4 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- kosher salt, pepper, Caribbean Jerk seasoning blend of choice (I also used Blackstone Island Stir Fry seasoning)
- 8 to 10 cloves garlic minced
- 3 tablespoons olive oil
- 3 tablespoons soy sauce
- 3 tablespoons lime juice
- 3 tablespoons brown sugar
- cooking oil of choice
- 10 to 12 sweet mini peppers sliced
Instructions
- Put the chicken in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning (to taste), garlic, olive oil, soy sauce, lime juice, and brown sugar. Massage bag until combined and marinate in fridge for at least an hour, I marinated mine overnight.
- Preheat griddle to medium heat. Add cooking oil and the seasoned chicken. Cook 3 to 4 minutes, mixing with spatulas a few times.
- Add more cooking oil to an empty space on the griddle and the sweet peppers. Season with kosher salt, pepper, and Caribbean Jerk seasoning.
- Cook both the chicken and peppers for 6 to 8 more minutes, keeping them separate.
- Pack in containers and store in the fridge for a few days and see post above for the 4 meals that I made using these chicken bites and sweet peppers.
