Blackstone Lemon Dill Catfish
If you want an easy and healthy meal on the griddle that is equally delicious and far from boring, Blackstone lemon dill catfish is the recipe for you!
Really any flaky white fish will do such as flounder, tilapia, or cod.
The Lemon Dill Butter sauce brings just the right amount of flavor without making this dish too heavy.
And an extra bonus of making seafood on the griddle outside is that your kitchen will not have any lingering fishy aroma.
How to make Blackstone lemon dill catfish
First make the sauce by melting 3 tablespoons of butter in a small bowl.
Then add some freshly chopped dill, a tablespoon of fresh lemon juice, and some old bay seasoning.
And also pat the catfish dry and lightly season them with Old Bay.
Preheat the griddle to medium low for several minutes.
And once it’s preheated pour about half of the seasoned butter sauce on the griddle.
And lay the seasoned catfish right over the butter.
The fish will cook for about 8 to 10 minutes total, flipping a few times.
I decided to make some broccolini on the griddle as well because it has a very similar cook time.
If you would like to make a vegetable such as broccolini, kale, broccoli, or green beans simply make a little extra butter and cook at the same time (maybe a minute or two less, just keep and eye on it).
Once you flip the fish the first time pour the rest of the butter over top.
Blackstone Lemon Dill Catfish along with the broccolini was a perfect complete and healthy meal!
And with minimal dishes thanks to cooking everything on the griddle.
Serve with some extra lemon wedges on the side to squeeze over top.
