Smoked Lemon Pepper Chicken
One of my greatest comfort foods is a whole smoked or roasted chicken… and this recipe for smoked lemon pepper chicken is bright and ohhh soooo flavorful!
A whole chicken in our house usually feeds 4, and sometimes I’ll make two to have leftover shredded chicken for salads, wraps, and casseroles.
My pellet grill is plenty big, so why not take advantage of the extra space, am I right?
I waited to make this till spring… because to me lemon is the ultimate springtime flavor đŸ™‚
But obviously you can make this anytime of year.
How to make smoked lemon pepper chicken
First pat a whole chicken dry with paper towels.
Your chicken should be between 5 and 6 pounds.
Then make a seasoning blend by combining melted butter, lemon pepper seasoning, lemon juice, garlic, a fresh herb of choice (optional), kosher salt, and pepper.
As you can see it is a thicker, paste like consistency.
Rub this mixture on the entire outside of the chicken.
Also, separate the skin from the breast meat and pour a good amount of this in between.
Finally sprinkle a little more lemon pepper seasoning, kosher salt, and pepper on the outside of your chicken.
And now we are ready for the smoker or pellet grill set to 225 degrees.
Place the chicken right on the grill or smoker grate for 4 to 5 hours, or until the internal temperature is above 165 degrees.
Make sure to let the smoked lemon pepper chicken rest before cutting into it.
We were all pleasantly surprised by the bright and fresh lemon garlic flavor!
And loved how moist and juicy the chicken was!

Smoked Lemon Pepper Chicken
Equipment
- Smoker
- Traeger/Pellet Grill
Ingredients
- 1 whole chicken (5 to 6 pounds)
- 4 tablespoons melted butter
- 2 tablespoons lemon juice
- 2 tablespoons lemon pepper seasoning (plus more to sprinkle over top)
- 2 tablespoons garlic paste or minced garlic
- 1 to 2 tablespoons fresh parsley or fresh herb of choice (optional)
- kosher salt, pepper
Instructions
- Pat the chicken dry very well with paper towels.
- Put the melted butter, lemon juice, lemon pepper seasoning, garlic, parsley or fresh herbs if using, kosher salt, and pepper in a bowl and mix until evenly combined.
- Rub this mixture all over the chicken, separate the skin and breast meat and pour some of this mixture in between the skin and breast meat.
- Sprinkle more lemon pepper seasoning, kosher salt, and pepper over top.
- Preheat your smoker or pellet grill to 225 degrees. Place the chicken on the smoker or grill grate for 4 to 5 hours or until the internal temperature is above 165 degrees.
