Blackstone Chimichurri Steak Bites
Steak night just got a major flavor upgrade with these Blackstone Chimichurri Steak Bites!
Steak marinated in an easy to make chimichurri and cooked on the griddle.
Then dipped in the leftover chimichurri for an extra explosion of yumminess!
It’s also keto friendly and low carb if you’re into that 🙂
How to make Blackstone Chimichurri Steak Bites
You can use any steak really, I used flat iron steak.
But sirloin or strip steak would be perfect too.
Cut 3 to 4 pounds of steak into bite size pieces and place in a gallon size plastic bag for mess free marinating.
Then make the chimichurri in a blender or food processor.
You’ll need a bunch of cilantro and green onions, a few garlic cloves, olive oil, a jalapeno, soy sauce, red wine vinegar, kosher salt, and pepper.
You can leave a few seeds in the jalapeno for heat, or remove them all.
Pulse this in the food processor until blended but not completely smooth.
Put a few spoonfuls into the bag with the steak with more kosher salt and pepper.
Massage the bag and marinate in the fridge for a few hours.
This next step is optional… add a small avocado to the food processor and blend to turn this into an avocado chimichurri.
Then cover the sauce and store in the fridge until ready to use.
If not using the avocado, just cover and place in the fridge.
I tasted for seasoning to see if more kosher salt and pepper was needed.
Preheat the Blackstone griddle or flat top grill to medium for a few minutes.
Then add some cooking oil and the seasoned steak bites, cook 5 to 7 minutes.
Flip and mix together using your hibachi spatulas a few times.
Serve Blackstone Chimichurri Steak Bites with the remaining chimichurri sauce for dipping 🙂
If you add the avocado it will be a creamy consistency, and if not it will be more of a thinner consistency.
Either way it’s insanely delicious!

Blackstone Chimichurri Steak Bites
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 3 to 4 pounds steak of choice (sirloin, flat iron, strip steak)
- 1 bunch cilantro
- 1 bunch green onions
- 1 jalapeno pepper (some or all seeds removed depending on your spice preference)
- 4 to 5 cloves garlic
- 1/2 cup olive oil
- 3 to 4 tablespoons red wine vinegar
- 1 tablespoon soy sauce
- kosher salt, pepper
- 1 small avocado (optional)
- cooking oil of choice
Instructions
- Cut the steak into bite size pieces. Place them in a gallon size plastic bag.
- Put the cilantro, green onion, jalapeno, garlic, olive oil, red wine vinegar, soy sauce, kosher salt, and pepper into a blender or food processor. Pulse the food processor a few times until the mixture is somewhat blended.
- Put a few spoonfuls of this mixture into the bag with the steak bites along with a little more kosher salt and pepper. Massage the bag until the steak is evenly coated and marinate in the fridge for a few hours or overnight.
- Put the avocado, if using, into the food processor and blend until smooth. Taste the sauce for seasoning and add more kosher salt or pepper if needed. Cover and refrigerate the sauce until ready to serve.
- Preheat the griddle to medium for several minutes. Add some cooking oil and the seasoned steak bites. Cook the steak bites 5 to 7 minutes total, flipping and turning them several times with hibachi spatulas. Serve with the chimichurri sauce for dipping.
