Grilled Maple Sriracha Chicken Skewers

Yeah, yeah, I do a TON of sweet and spicy recipes, my friends…but hey, I LOVE my sweet and spicy, as is the case with these Grilled Maple Sriracha Chicken Skewers!

The marinade for the kabobs is also balanced with salty, umami flavor from the soy sauce.

And a touch of acidity from the lime juice.

Everything for the marinade I keep on hand… but does that really surprise ya?!

Summer grilling season will be gone before we know it, and I am taking full advantage of as much outdoor cooking and grilling as possible đŸ™‚

How to make Grilled Maple Sriracha Chicken Skewers

So the marinade (and also the saucy glaze that gets brushed over while grilling) has just a few ingredients.

Maple syrup, sriracha (any brand since this one is apparently hard to find), soy sauce, garlic, and lime juice.

Just whisk it all together.

Then cut 2 pounds of boneless, skinless chicken thighs (or chicken breasts) in bite size pieces.

And put them in a gallon size plastic bag for mess free marinating.

Put a few spoonfuls of this goodness in the bag with the chicken, massage the bag, and marinate in the fridge for a few hours.

Then put the chicken onto 4 kabob skewers.

And season with kosher salt and pepper.

Preheat the grill to medium for a few minutes.

I do recommend well oil grill grates due to the stickiness of the marinade.

And grill these for 9 to 12 minutes total, flipping them a few times.

And brush with the rest of the maple sriracha sauce a few times as they grill.

If they stick while flipping, I recommend wiggling back and forth with tongs to loosen them.

That should do the trick đŸ™‚

Garnish Grilled Maple Sriracha Chicken Skewers with sesame seeds and chives if desired.

These are full of flavor and require no sauce.

Unless you’re a sauce junkie like me…in which case I recommend a store bought yum yum sauce!

Ingredients
  

  • 2 pounds boneless skinless chicken thighs (or chicken breasts)
  • 1/4 cup pure maple syrup
  • 1/4 cup soy sauce
  • 2 to 3 tablespoons sriracha
  • 5 to 6 cloves garlic minced
  • 1 tablespoon lime juice (optional)
  • 4 kabob skewers (if wood soak in water for a few hours)
  • kosher salt, pepper
  • Optional: sesame seeds or chives for garnish, store bought yum yum sauce for dipping

Instructions
 

  • Cut the chicken into bite size pieces and place in a gallon size plastic bag.
  • Combine the maple syrup, soy sauce, sriracha, garlic, and lime juice (if using) in a bowl and whisk together.
  • Put a few spoonfuls of the sauce into the bag with the chicken. Massage the bag to evenly coat the chicken. Marinate in the fridge for a few hours.
  • Put the chicken on the kabobs skewers and season with kosher salt and pepper. Preheat the grill to medium for several minutes. Grill the skewers 9 to 12 minutes total, turning the kabobs a few times. Brush the remaining sauce on the skewers a few times.
    Note: I recommend well oil grill grates to prevent sticking, if sticking does happen gently rock the skewers back and forth with tongs until the chicken releases.
  • Garnish with sesame seeds and/or chives and serve with yum yum sauce if desired.
