Traeger Lemon Raspberry Cheesecake Bites

I only do super simple dessert recipes, so you know Traeger Lemon Raspberry Cheesecake Bites are easy to make!

Just a simple raspberry sauce, an easy cheesecake mixture, then rolled in crescent roll dough.

Cooked to fluffy perfection with just the slightest hint of wood flavor.

This recipe only makes 8, but can easily be doubled if you are feeding more đŸ™‚

How to make Traeger Lemon Raspberry Cheesecake Bites

Start with a small saucepan and add 3 tablespoons of water and a tablespoon of cornstarch.

Whisk until combined.

This will help to thicken the raspberry sauce as it simmers.

Then add a pint of fresh raspberries along with 1/4 cup sugar, a tablespoon of lemon juice, and a pinch of salt.

Bring this to a boil, then reduce the heat to simmer for 5 to 6 minutes.

And stir it a few times as it cooks.

The raspberries will break apart and create a lovely, sweet sauce.

Let it cool slightly while you make the cheesecake filling.

Similar to most of what I do… this cheesecake filling is rather non traditional and just kind of my own twist.

Start by mixing 4 ounces of cream cheese (at room temperature) with a hand mixer for a minute or two.

Then add in some lemon juice, lemon zest, vanilla extract, and sugar.

And mix this for another minute.

Now we are ready to assemble these roll up bites of heaven!

Start by unrolling a tube of crescent rolls and separating the triangle pieces of dough.

Then spread some of the lemon cheesecake filling and then the raspberry filling over each.

Roll them up and place on a baking sheet.

Set the Traeger or pellet grill to 325 degrees.

And place the baking sheet on the grill grate for 23 to 26 minutes.

Brush them with melted butter during the last few minutes.

I also like to grate some fresh lemon zest over top for a little pop of freshness.

Ingredients
  

Raspberry Filling

  • 3 tablespoons water
  • 1 tablespoon cornstarch
  • 1 pint fresh raspberries
  • 1 tablespoon lemon juice
  • 1/4 cup sugar
  • pinch of salt

Lemon Cheesecake Filling

  • 4 ounces cream cheese at room temp
  • 1/4 cup sugar
  • 2 tablespoons lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract
  • 1 tube crescent rolls
  • 1 tablespoon melted butter
  • Optional: lemon zest as garnish

Instructions
 

Raspberry Filling

  • Put the water and corn starch in a saucepan and whisk until combined. Add the fresh raspberries, lemon juice, sugar, and pinch of salt. Then set the saucepan over medium heat, bring to a simmer for 5 to 6 minutes, stirring a few times. Let cool.

Lemon Cheesecake Filling

  • Put the cream cheese in a bowl and beat with a hand mixer for 2 minutes. Add the sugar, lemon juice, lemon zest, and vanilla extract. Beat another minute or two until combined.
  • Unroll the crescent roll dough and separate into 8 triangles. Spread some of the lemon cheesecake filling and then spread the raspberry filling over top of each dough triangle. Roll them up and place on a baking sheet.
  • Set the Traeger or pellet grill to 325 degrees. Put the baking sheet with the cheesecake roll ups on the grill grate for 23 to 26 minutes. Brush with butter and garnish with lemon zest during the last few minutes on the grill.
